    Mornin’ y’all! Today starts early voting in Louisiana (for some stuff – gawdknows how we’ll end up redistricted!) Anyway, our Cassidy is worse than TX’s Cornyn.

      Trust me on this. You really want this pie. Of course, the authentic one has bourbon in it, but I found this one in an old, old church cookbook and have used it many years. My family inhales this. Make fresh whipped cream, maybe put a teensy touch of bourbon in that. I am generally discouraged from coming to our huge family Thanksgiving dinner unless I bring these pies.

      Derby Pie
      1 stick butter
      1 package chocolate chips (smallest package)
      1/2 cup self rising flour
      1 cup sugar
      2 eggs well beaten
      1 tsp vanilla
      1/2 cup chopped pecans
      Deep dish pie crust

      Pour choc chips into bottom of pie crust. Melt butter and add to flour and sugar. Add eggs, vanilla and nuts. Pour over choc chips and bake at 350 degrees 40-50 minutes. Note about baking time: it varies according to your oven. If you cook the pie just the way I like it, it has a melty caramel center. A little more done and it is like a big chocolate chip cookie. Best cooled completely. Not good hot or warm, believe it or not. Great with cool whip! Or better yet, fresh made whipped cream.

    Good mornin’, and happy Saturday! This cool weather has me sleeping in just a bit. This morning, we’ve even got a snack to go with our coffee. Keep your head on a swivel and carpe’ your coffee!
