My pasture raised turkey (local farm) is being delivered today. I had one last year and, although it’s more expensive, it tastes better too. This year I had them do the butchering for me, and I will put it in the frig to dry brine as soon as it arrives.

We had one of those a few years ago. It was delicious! One of those bronze organic ones. Very expensive, but worth it!
