I’m ready to get back home as well, soon as we get out of church.
I told my husband we need to do something about having no alternate source of heat. Never let ourselves be in this situation before, but since we left the cabin, we don’t have a wood stove or the propane stove we had there.
I miss my fires!

Reflection, I saw your comment on the bread post, which is an excellent recipe, btw. Stella’s correct, using that technique really improved my bread, and definitely made it easier. I’d really love to have a stand mixer, now that I’m older, but I just can’t get myself to pay the price.
About a year and a half ago, I just started a culture with flour and bottled water. I followed the instructions on the King Arthur site. For some reason, it was really slow to get going really well, only getting super bubbly and flavorful after about three months. It made good bread before then, but the real flavor was later.
Now I keep several jars in the refrigerator, feed them once a week. I use King Arthur AP and some rye.
Basically, I make any recipe I want sourdough by adding it in, and reducing water and flour increments in the recipe. I also use it to make crackers, which seems kind of silly, but they are among my favorite treats I’ve made, pancakes of course, delicious granola bars, cinnamon or fruit buns, muffins, you name it. Only thing I haven’t tried it on is biscuits. I keep telling myself to try it, but I hate to mess with them.
I’ve had endless fun with it, enjoyed some delicious things, made nice gifts. Best of all, it’s healthy and good for your gut. Half a loaf slathered in butter? No, but a slice or two daily is good for your gut.
There are lots of ways to grow the starter, many flours you can use. I find the AP with a little rye mixed in to be quite versatile. I make brown breads a lot, and it works well. I used to use beer sometimes, and potato water as well. Those can make great starters, but they are powerful flavors, not as versatile. Also, I’m not a purist. If I want a different flavor, say using potato water and more rye, I just start with what I have and add the new ingredients to what I’ve set aside for a new batch. Re stand mixers, check out KitchenAid’s refurbished appliances. That is what mine is (small, white, plain). I think Jen paid $99 for it, and I’ve had it for years. I returned the favor and got her one. Also, Amazon has refurbished appliances. Here’s the KitchenAid link:

Mrs. T got her first KA stand mixer as a hand-me-down from her momma. She wore that one out and we splurged and got a new one. At least 10 years ago and still going strong. I gotta take care of my chef!

Mine is a 4-1/2 Quart, tilt-head, white mixer. It isn’t fancy, but it does the job, and the price was right.

I’m saving it for reference, as sourdough seems to have significant benefits, perhaps even in the way the body metabolizes the carbohydrates.
The rye flour may be a significant part of your success, since it contains more nutrients than plain white flour.
With the simpler technique that Stella posted, it should make it easier to produce good sourdough bread.
Since you mention success with quick breads, I should try that as well.

I have read that rye flour ferments more quickly than wheat flour and it hydrates better, so it is a good component in a sourdough starter. It also adds a distinctive flavor.

All of those. It’s hard to keep a starter well fed on AP alone, and so far I like rye best as an additional element. Especially if you have a sluggish starter, adding rye is good.
Strangely enough, I have found that refrigerated starter is much more robust than keeping it out and more frequently fed. Mine really bubbles when refrigerated. I’m sure there’s a simple scientific reason why, I just haven’t bothered to look it up.

Afternoon All. It snowed some inches last night, but the roads were pretty clear. So, I drove to church and then went to the old apt to check it out. The cleaner I got did a fabulous job. I figure the rental agency will find something wrong, though. Can’t wait to not have to go there again.
I talked to a neighbor and a woman was walking her pit bull without a leash when my neighbor came home. She was using a buzzer to try to control it. My neighbor had to hide in her car until the woman put a leash on it to walk it away because it came after her.
Hope all of you are staying warm. It is a little chilly here, too.
