    Reflection, I saw your comment on the bread post, which is an excellent recipe, btw. Stella’s correct, using that technique really improved my bread, and definitely made it easier. I’d really love to have a stand mixer, now that I’m older, but I just can’t get myself to pay the price.

    About a year and a half ago, I just started a culture with flour and bottled water. I followed the instructions on the King Arthur site. For some reason, it was really slow to get going really well, only getting super bubbly and flavorful after about three months. It made good bread before then, but the real flavor was later.

    Now I keep several jars in the refrigerator, feed them once a week. I use King Arthur AP and some rye.

    Basically, I make any recipe I want sourdough by adding it in, and reducing water and flour increments in the recipe. I also use it to make crackers, which seems kind of silly, but they are among my favorite treats I’ve made, pancakes of course, delicious granola bars, cinnamon or fruit buns, muffins, you name it. Only thing I haven’t tried it on is biscuits. I keep telling myself to try it, but I hate to mess with them.

    I’ve had endless fun with it, enjoyed some delicious things, made nice gifts. Best of all, it’s healthy and good for your gut. Half a loaf slathered in butter? No, but a slice or two daily is good for your gut.

    There are lots of ways to grow the starter, many flours you can use. I find the AP with a little rye mixed in to be quite versatile. I make brown breads a lot, and it works well. I used to use beer sometimes, and potato water as well. Those can make great starters, but they are powerful flavors, not as versatile. Also, I’m not a purist. If I want a different flavor, say using potato water and more rye, I just start with what I have and add the new ingredients to what I’ve set aside for a new batch.     Afternoon All. It snowed some inches last night, but the roads were pretty clear. So, I drove to church and then went to the old apt to check it out. The cleaner I got did a fabulous job. I figure the rental agency will find something wrong, though. Can’t wait to not have to go there again.

    I talked to a neighbor and a woman was walking her pit bull without a leash when my neighbor came home. She was using a buzzer to try to control it. My neighbor had to hide in her car until the woman put a leash on it to walk it away because it came after her.

    Hope all of you are staying warm. It is a little chilly here, too.

      That’s high praise for your cleaner, Aus.

      Since a really good cleaning was done, perhaps they won’t deduct from any deposit. It’s rare when those who move out take as much care as they expect when moving into another apartment.
