   Stellars….

   Happy Taco Tuesday!

   This photo of delicious-looking fish tacos was taken at an upscale Mexican restaurant and linked to an article that has disappeared into the Internet ether. Soooo, what to do?

   

   I then threw myself on the mercy of AI and inquired: “Where in the world is the most remote Mexican food restaurant?”

   AI immediately and politely responded: “The most remote Mexican restaurant is located in Longyearbyen, Svalbard, Norway. This restaurant is notable for being the northernmost Mexican dining establishment in the world, situated far from traditional Mexican culinary influences.”

   Andddd…I subsequently checked out that info to find the following article detailing the best restaurants in that city…

   Tio Monchos is listed quite favorably…

   Location: Longyearbyen Kulturhus downtown. Do you need a reservation? No.

   “A newer place in Svalbard is Tio Monchos. This is considered to be the world’s northernmost food truck and restaurant and you can find it inside the Longyearbyen Kulturhus (downtown). You may also see their food truck parked outside.

   “The place gets insanely good ratings, so I had it on my list of places to eat lunch at and finally had a chance to go on my latest trip.

   “I did not realize that they had a rotating menu and every day was different, which was pretty cool (and gave me the chance to eat there multiple times).

   “While they are renowned for their Mexican fare, they also have different options depending on the day of the week. The first time I went there, the menu consisted of cauliflower soup – it was delicious!

   

   “To see what is on the menu each day, keep up with their Facebook page linked above. I highly advise enjoying lunch there one day.”

   There you have it! A full report is expected should you have occasion to visit this restaurant in the hinterlands of Norway.
