Stellars….
Chicken dinner and taco night collide with smoky chipotle chicken tacos.
By Southern Living Test Kitchen – Updated on September 19, 2024
One of the key ingredients in these chipotle chicken tacos is a jar of salsa from the supermarket. Yes, really. The salsa creates a spice-packed cooking liquid for the chicken to stew in, adding big flavor from the very beginning. When shopping, pick a jarred salsa with a chunky consistency. “Restaurant-style” and “cantina” salsas are too watery for this recipe.

Good mornin’, Lucille! I’ve always love the chicken taco wrapped in a fluffy flour tortilla! Coffee’s ready, ma’am.

Well, sounds like lunch is planned. And I won’t have to cook: There is a Taco Bell next to my gym.

Good afternoon, Czarina!
Seems like a successful execution of that plan.👌

Good day to you, Stella! I’ve never been on a cruise but I’ve seen YouTube travel videos on the Margaritaville and it definitely looks like a great time and food, too.

That sounds great. I had given up on any cruises because of the lousy loud music, rap, , and all the noise. I could listen to Jimmy Buffet all day.

Good mornin’, and happy Tuesday! Hooking up our tacos today with some coffee from the same folks who invented those tortilla wrapped treasures. Keep your head on a swivel and carpe’ your coffee.

Back in the 70’s I used to shake after one cup. Then I found out that they put caffein in my antihistamines. LOL

Good afternoon, Aus!
It’s somewhat disconcerting to find out the additional ingredients used in some antihistamines to enhance their effects.
Pseudoephedrine is another stimulant used as an added decongestant in some formulas.

Stella, this made me think of you, and I’m sharing it because it could actually be a meal if you do add the tuna. Which I’m not entirely sure about, but willing to try. Or maybe one of those foil packages of salmon, or salmon leftovers when I cook a big piece.
Tuesday seems a good say to share a Spanish potato salad recipe.
Patatas Aliñadas
The trick is to let the potatoes absorb the dressing.
Warm boiled potatoes
Lots of red wine vinegar
Olive oil
Touch of salt
Mix that all up then add
Tuna
Veggies (diced red onion, diced roasted pepper) maybe some gherkins
Chopped Parsley
Chopped boiled eggs

OMG, Menage! You’d ruin a perfectly good ‘tater salad with FISH??? Gaaaaaaaackkkk……

Well, I’m inclined to leave it out to try it first. But I confess to liking the idea of one meal. Maybe just serve it with tuna? It is kinda y uck to think about, isn’t it?

Fish on the side works for me! I found a potato salad variety at the WalMartinez that I like – Deviled Egg! I’ve always made mine with mustard ‘n onions.

Myo problem is the vinegar. But, thats just me.

Good morning, Menagerie!
Makes me think of German potato salad. I could understand the red pepper and onion, but like Wee, I’m stymied by the tuna added.
Might make it, but add tuna to a tasting portion, before adding it to the whole.
It’s interestingly different, thank you for sharing the recipe.

Morning, Menagerie! Some of that yummy olive-oil packed Italian tuna, perhaps! I think it could be good. I had salmon for dinner last night with spinach that was cooked with shallots, garlic, capers, lemon and butter. Really good.

National Construction Appreciation Week – housing and work would be a mess in tents…
Don’t you have to construct tents, too? Materials, tools and know-how are needed there, too, although it’s a movable structure.
We’d be in a real bind without all forms of construction. (Ever since Adam and Eve needed to figure out how to make aprons out of fig leaves.)
