Hi Lucille. Better drain those tomatoes a lot longer than 10 minutes. First on a paper towel like it says, then later on some type of rack or colander. It’s very hard to make that pie without it coming out soggy. And double the topping and add a cup of Gouda to it.
A tomato pie like that is the very pinnacle of fine summer eating!

I’ll bet that Roma tomatoes would be good for this purpose. More meat, less water. Another way to get rid of the water is to core and freeze the tomatoes, then thaw. The skins slip right off, and the water drains off easily.

I really like summer varieties of home grown tomatoes, especially some of the yellow ones, etc. I’m with you on the romas, and my daughter in law, who makes a much better pie than I do, cores the whole tomato and gets all the goop out, then drains in her Tupperware container which has a ridged bottom with channels for drainage.
This is the recipe we use, but with the changes listed above. You must bake the pie crust, which I don’t think Paula’s recipe calls for, and we don’t blanch the tomatoes. Add the Gouda!!! Also, go heavy on the fresh basil, IMO.

Also, I like pepper in it. But your mileage may vary, I can’t eat without pepper, so I’m not actually a reliable source on that!

I’m in on fajitas. I used to be big on mail order catalogs before the internet because I have a life long aversion to shopping. About November my mailbox would get stuffed with every catalog out there.
And wow, my brother and I fought for that Sear’s wish book every day for weeks before Christmas! Good old days.

Good day, Czarina! Mail order catalogues were the way to go when I was working. Barely anything in my home before 1990 was purchased any other way. I still get a regular supply of Lands End catalogs.
Anyone remember the book clubs like Book of the Month (still in business), the Literary Guild or Doubleday? I belonged to most all of them. Last night I pulled out a copy of the script for the film “Casablanca” starring Humphrey Bogart and Ingrid Bergman which came from one of the clubs.
Later I belonged to clubs which provided VHS videos and had hundreds of movies in my collection.

Mornin’ All. Still coolish and somewhat cloudy this morning.
Got my license renewed yesterday. I just have to say, I have lived in many states and had to get licenses in them. The people in the MVD here are the nicest and most helpful I have come across anywhere.
Renewed my lease here since it is up the end of September. This is a little early, but I am glad to know how much higher the rent is going o be. They only went up $25 which is wonderful. I am in no hurry to move.
On my way to the doc for a yearly checkup. I am not sure how much good it does, but I will go.

Good day to you, aus! That, indeed, is wonderful on the $25 rent raise. We’re all getting stuck starting September for $150 raises. If the raises were also accompanied by more services I wouldn’t be so annoyed. Alas, not.

Hi there, mom! I’m glad I have a small mortgage instead of a rent payment these days. No surprises.
I just rescheduled my annual checkup from the end of this month to the end of next month. I don’t know that it does much, except that he orders my blood work. I just saw him on an emergency basis two weeks ago.
