        The company is still around. And in the spirit of the day they are sending this recipe.

        Norwegian Lutefisk Taco: Put a piece of lefse on a dinner plate. Top with a thin layer of mashed potatoes. Flake lutefisk on top of the potatoes. Pour melted butter over the top. Add salt and pepper to taste.

        Memories and comments on lutefisk:

        Fish jello with occasional piece of what was at one time bone ( it jellifies) and skin. Smell is far worse than the taste. Good way to eat is to drown it in butter, white sauce and pepper the hell out of it. Grew up eating it on Christmas. Wasn’t allowed to open presents till it was gone.

        The flavor is extremely mild, like a steamed cod or something.

        The thing people dislike is the texture, which is not so much like Jell-O as it is like congealed gravy.

        But more to the point, the basic wiggly texture isn’t even what people have a big problem with. The problem is that the texture isn’t homogeneous. The meat of the fish is soft and gelatinous, but the bones are only partly dissolved, which can give the same kind of feeling as you get with questionable chicken nuggets, where you sometimes get a chewy bit of connective tissue.

        If you still want to try it: Bacon saves the day.

        Taste is pretty neutral, not all that fishy. Texture is what gets people. We’ve taken to preparing it with a butter sauce and chunks of crispy thick cut bacon. Serve it on top of some Yukon gold mashed potatoes and you’re set.

    Mornin’ All. Overcast and yucky out. It is in the mid 40’s, so no chance of snow. And, the rain has finally quit until late tonight. It was really pouring off the roof last night. At least I can get out of my driveway.
