Not too long ago I took two of my grandchildren up to light votive candles before Mass. My hair caught fire and I didn’t know it for a minute until the kids told me. I really didn’t think I had gotten that close, but these days, at least for awhile, I am saying my prayers without any candlelighting. I sure was embarrased, but thankfully few people seemed to have noticed.

You can’t keep everyone happy no hard you try.
The spillway on the northern side of NOLA’s been open for a record amount of time now, flooding the brackish eastern edge of Lake Pontchartrain with fresh water and causing ecological changes in the lake. Actually it’s doing what it did before the folks up and down the river demanded the Mississippi be diked for almost its entire length…but then what’s natural to the Latter Day Treehuggers began with their epiphanies. It’s caused a heavy die-off of shrimp and oysters in those areas they’ve been farmed in since the river was diked and these areas formed ‘unnaturally’ and we have fisherpersons (like that?) and treehuggers protesting the area being returned to what it was/is supposed to be.
Meanwhile, down towards the mouth of the river, we have areas where the Glf is lapping right up against the Mississippi. The only thing stopping the river and the Gulf from joining is the thin levee and if it were to break shipping would have a major problem as water levels in the only outlet from the river to the Gulf would be in serious danger of dropping. I can remember miles of marsh in these areas, we’d cruise the canals netting shrimp and catching freezer chests of redfish and speckled trout in the pools and canals. All gone now, you can stand on the levee and where you used to see endless miles of marsh and see endless miles of Gulf, thousands upon thousands of square acres of marsh are gone.
About 1926 some of the lower river levee was removed to relieve pressure on the river during floods. During regular water the river flows just under the cut but during high water encountered during floods the water flows over and helps relieve the pressure on the levees to the north. Now for the almost 40 years we’ve been here it’s been an endless whining and tearing of clothes by the state about how the land is disappearing and how we (meaning the US taxpayers) have to do something about it. Endless money, tears and predictions of doom have regularly poured into state government, Federal government and private studies, reports and unadopted proposals. There are dozens of ridiculously expensive pinprick projects going on that would be cheaper had the money itself just been tamped into the marsh but few produce anything really productive.
Enter the 1926 cut in the lower river levee, the Mardi Gras Pass Spillway. It’s making land like mad, pouring the sediment the river pulls down during high water, dumping it in the shallows and building land as the river did for eons before we messed with it. WOW! LAND BEING BUILT! You’d think the folks would be ecstatic, a cheap sand natural process that reverses decades of land loss. No more hugely and environmentally wasteful (though profitable for connected businesses) of moving river sediment over the levees and spreading it around. Land being returned to lessen hurricane surge and help decrease storm surges before they hit New Orleans. Win-Win! Nope.
Seems the land that ain’t there no more is owned by a lot of different and powerful folks from investment companies to school boards to foreign banks and even though the dirt on top ain’t there they still own the land under the water and many of them aren’t happy, for various reasons, with the land being built up again. Also there are shrimp, oyster and fishingpersons (there we are again) who have leases and are not happy about changes to their business that land building would bring. On one hand we have the people living in the populated areas to the north who are heavily threatened by the ongoing land loss fighting to have the land rebuilt and on the other we have people with personal interests in land loss fighting the rebuilding.
In the areas rebuilding outside of the Mardi Gras Spillway oysters and shrimp fisheries are dying out but crawfish are back and in bigger numbers with a much longer season, they’re replacing the old industries. Sounds good but now the powers are rallying to have the nearly 100 year old spillway closed as the fishing folks don’t want to change to crawfish or wait for the shrimp/oysters to reestablish naturally where the land’s rebuilt. We have monied interests pushing for no change and the Gulf relentlessly creeping closer and closer to the south shore of the Mississippi and the New Orleans metro area. As the Gulf creeps closer to the levees on the south side of the city there’s not only the danger of a hurricane surge that will flood NOLA like another Katrina but mat breach the levee on the south side of the river causing a huge mess that will be horribly expensive to fix and may well change a lot of petroleum and shipping patterns in the US.
So next time you’re enjoying a Gulf oyster or shrimp remember that it comes with a potential price that will be extracted by Louisiana special interests that are willing to risk destroying a major city and altering international shipping while passing the bill on to US taxpayers. Oh yeah, the Louisiana politicians who are in their pockets, can’t forget them.

Why is it that Gulf shrimp is so much easier to find in North Coast groceries than Carolina shrimp? From what you wrote, it sounds like Gulf shrimp is drying up, yet it is found here year-round. Carolina shrimp is only available sporadically. Strange. Sneads Ferry shrimp is best, imo, but rarely, if ever, found here.

The Gulf shrimp start out in the marshes where they grow and then migrate out into open water. We have shrimp caught in the closer inshore areas and then those caught in the open waters well offshore.
The Gulf over by Texas and the west coast of Florida also provide a great deal of shrimp but to the west of the mouth of the Mississippi the huge-and-growing annual ‘dead zone’ is starting to effect that.
As the shrimp use the marshes as a nursery the loss of the marshlands also effects the number of shrimp. The rebuilding process will dampen the shrimp numbers until the marsh rebuilds but strong marshes will cause the shrimp, oyster and fish populations to boom. Louisiana folks jes can’t get past that immediate gratification thingie.
BTW, as an aside, the Asian Tiger Shrimp has found its way into the Gulf. If you’re not familiar with them they are to the regular white/grey shrimp what an oversized pitbull is to a chihuahua. They are voracious, aggressive, huge and TASTE GREAT! We have them in some freezers out there and they may be more widespread as the chew their way thru the Gulf.

Just about an hour after I posted this a LSU prof in their hydrology department posted a large article on how the entire Corps decades-long process of channeling the Mississippi is very close to creating a huge mess.
There are huge sandbars along the River created by the slowed flow. That’s causing the River to rise even more during high water times and creating even more deposition, there’s also a monstrous sand bar down river from the Old River Control structure that’s causing the river to back up.
Gist of it is that at some point soon the river’;s just going to go over, under, through or some combination of that, busting the ORCS and the Mississippi will go down into the Atchafalaya and NOLA will be sitting on a huge, dry ditch. That won’t last long though as being 3 feet below sea level the Gulf will move up the River to Baton Rouge. There goes the drinking water for a whole lotta peoples.
It’s a mess and everyone in the state’s kicking the can down the road. It’s gonna be like Katrina where the city and state folks will wait for it all to fall through then have the Reds pick up the mess.

Several days ago I sent an inquiry about a product I was interested in to an online retailer. Pictures weren’t clear and it wasn’t covered in the description, so I asked them what certain parts of the product were made of.
The answer they sent me was manufactured wood. I sent a reply telling them there is no such thing, did they mean laminate, plastic, what? I’m betting this time I don’t get an answer at all.

Decided that a big bread salad with cold shrimp was what we wanted tonite so we got a couple of pounds of fresh shrimp and, being a wee bit lazy, some frozen bread dough to bake. We baked the bread and while it was cooling peeled the shrimp we’d boiled.
Oh brother, the gray stray cat we’ve had for about 6 years (she’s finally treating us as other than her personal slave) rushed over and started pushing around the counter as I was cutting. I took a fingernail piece of shrimp and moved both it and her away. I look back and she’s back, she doesn’t want the shrimp, she wants a piece of the fresh bread. I give her a grape-sized chunk, she carries it off and wolfs it down. I keep cutting and she’s back, I give her a piece twice the size and off she goes. Final total, she did eat the shrimp (after the bread) but at two goodly size chunks of fresh bread, bread she chose over fresh and freshly boiled shrimp.

I wonder if it is like an Italian bread salad (panzanella), but I think that’s made with stale bread.

The traditional way to make panzanella is to soak the stale bread and then wring it out. I like this “crouton” approach much better!

Hope this’ll give ya some ideas. The hearty bread is the soul, it absorbs the juices and dressing and is a perfect brunch or dinner on a summer day.
You can add just about anything you want in it, just use a good bread like French or Italian, the bread has to have body or it turns mushy.
This doesn’t keep, it’s best to add the bread just before serving. Also put the damp veggies like tomatoes in a colander to drain before mixing in to keep the bread’s body. Ilike roma tomatoes as they’re not a mushy but you can use firm commercial ones – just make sure to drain a bit to remove excess drippy stuff.
We like garlic so I put in lots of the jarred, prepared garlic from the store (we have two jars in stock at any time). I find the jarred garlic has a more developed flavor for ‘raw’ eating than sliced fresh garlic. All your choice though.
We like a ‘clear’ dressing like a wine vinegar vinaigrette or lemon and oil but I find it’s best to add it individually as the bread absorbs a lot of the dressing and different folks will want different amounts.
I generally don’t put iceberg lettuce in, I find it robs the taste but a small handful (an individual measurement) of those bagged mixed greens without iceberg helps with a bit of a green taste.
Go wild, own this salad. I love the bright taste – goes great with beer or wine – it’s quick and easy to make and if you want to add in a meat you have a complete meal.

Sounds great, I’d never heard of a bread salad. I make a cornbread salad in the summer, but it is quite a different thing from this and what Stella posted. Going to have to go get me some good bread!

Look at the recipes I posted with this. We’d forgotten about it until yesterday, but it’s so easy, versatile and simple to personalize it’s too good to ignore.
