Good morning y’all. Made my first sourdough bread yesterday. Unfortunately, two hot pieces with butter and a little beef roast swimming in juices with the standard vegetables set my weight loss back a little. Today is a salad and smoothie day! Some things are just worth it.
BTW, while we were in Florida back in July, the house we stayed in had some basic seasonings available. They also had a bottle of Everglades Seasoning which I fell in love with. Great in making a dip, seasoning meats, and soups. It does have MSG though. I sure do like it.

We always have something that can be kept warm in the crock pot or kept cold in the ice chest on race night. We usually have chili, taco salad, bbq pork or bbq beef sandwiches, cold cut sandwiches, etc. I made beans with smoked ham hocks yesterday for our meal tonight. It’s one of my most favorite meals.

Good Morning Menagerie! It must be the season….yesterday I finished my first ever ‘wild yeast’ sourdough starter made from grapes. Smells really good and I’m excited to bake with it. Maybe tomorrow…..today I’m making my first ever Pane Siciliano! (This is not my photo….mine isn’t baked yet, but I’ll post something once it’s baked.)

Here’s a link to Nancy Silverton’s grape starter – it’s a little more fussy but the concept is the same. http://www.food.com/recipe/nancy-silverton-s-grape-sourdough-starter-316306
I made mine using barely rinsed organic grapes since I seemed to be out of the wild variety….! Measured equal parts water and KA all purpose flour into a bowl, added ten crushed grapes and stirred. Then, and this is cheating a little, I dipped a tine of a fork into my Rye sourdough starter by about 1/16th of an inch and inoculated the grape slurry with this little drop. That way I could be sure that the yeasties would get going before the bacteria could.
Once it was bubbling away, I ran the slurry through a sieve to get the grapes out, fed it equal parts spring water and flour. Ta DA!

The long-rise doughs are the best. There is a KFA recipe that I like, a ciabatta roll, that is a one-day first rise (counter). Tastes great and has a wonderful texture.

They sell thru the mail if you can’t find it locally. I’m addicted to it, I use it in egg/potato salad instead of salt, soups, gravy, even some garden salads with less vinaigrette dressing…homemade, store-bought has too much sodium to begin with and it increases the salty taste.

Everglades is good in potato salad too, a rare thing for me to change mine, as I got it where I wanted it years ago, and am uber picky about it. I almost never stick to the same way of making things, but when ya got a great potato salad, it’s the stuff.
You have to be careful with the Everglades though, because it does have salt in it, and a little goes a long way. Take some sour cream, a little mayo, the Everglades to taste, along with garlic powder and paprika, and/or chili powder, again, to your liking, mix well and man do you have a great dip. Probably better if left to chill a few hours, but we never can. It has enough flavor in it that you can use it sparingly with vegetables and not kill yourself on calories, in spite of the sour cream and mayo. Of course, so does a good salsa, which is much better for you.

There are times I wish the Europeans had left Africa and Latin/South America to wallow in their own cultures. I can remember in a cultural anthropology class being told that the reason we haven’t found the advanced cultures that allegedly existed there in the past is they were most likely made from wood and the termites would have eaten them away by now. Even though the shooting rate climbs you can’t say the fest doesn’t work, standard explanation is “just think how bad it would be without the fest!”. Don’t know if the relgious booths, painting tables and free blood pressure checks helped but they couldn’t hurt.

During the 28 years Grant and I lived in SoCal, we often talked about the reality that there were really very, very few efficient ways out of there in case of The Big One.
I-15 toward Las Vegas. I-10 a little further south. Head north into nowhere on I-5 or Highway 395.
But in terms of actually getting out of state in a hurry? Wasn’t gonna happen. And even if you did (east bound) you were facing hundreds of miles of desert where fuel would already be gone.
Drove me crazy for almost three decades and I never heard any serious conversation from anywhere about it.
I was SO glad to have SoCal in the rear view mirror in 1993.
There is no way to evacuate southern California for a storm (unlikely need) or anything else (more likely need) – like war, or earthquake.
The people we talked to over the decades mostly couldn’t seem to get through their heads that the grocery-inventory was about 24 hours in most cases. Probably some of them didn’t even know where eggs or milk came from. That’s a problem, too. Seriously.
Anyway, just noticed this article in the Miami Herald and it describes the thing as well as anything I’ve seen, in Florida’s case.

We were the test baby for evacuation. It has ‘contraflow’ where the interstates have outbound traffic in all lanes, the inbound lanes too. It’s also a test baby for less than brilliant decisions such as refusing to fill in and make kevel a huge dip under a railroad bridge on the I-10 that floods, leaving the main westbound lanes from diwntown on the I-10 blocked.
If it rains heavily before the storm arrives the non-interstate roads out of town flood leaving the interstates as primary routes. People here don’t like to evac until the storm’s in their backyard so if the I-20 dip is flooded thst means the people evacuating west have to squeeze over the msin bridge over the river and join everyone else on the Westbank tring to get the 310 bridge over the Mississippi to the I-10. Wanna try and get to the limited number of I-10 west access roads in Jefferson Parish and you have to wriggle through neighborhood streets and hope you can get onto the I-10 before the storm hits.
If you’re lucky you can onto the causeway going over Lake Pontchartrain and get on the I-12, going tonwhere it meets I-55 north, the I-10 around Baton Rouge or east to the I-59…all are hoing yo be jammed.
Generally the states of Mississippi and Alabama will move to close the I-10 east as their folks in the southern parts of their states will use it to move east or west as where a Gilf storm headed for the northern shore is a eild card.
The state’s done a lot since Katrina but they’ve limited by geography. Real residents, not newbie transplants, have backroads they know but they have to get north of Lake Pontchartrain before you can use them and after Katrina many tiwns are letting evavuees stop for gas or food but they ain’t letting you park for longer than it takes to gas and grub.
Needless to say that there are lots of cars stopped in the roadway for various reasons and traffic’s stopped dead in many places. Those knots takes hours to clear as with all lanes going outbound service vehicles can’t get them. Even when the down vehicle is moved it takes hours for that backup to clear.
I can’t think of too many major metro areas where a major evac wouldn’t turn into a goat rope. Look at Houston’s attempt to evac before Harvey, no wonder so many folks decided to stay at home.
