This is “a good thing” 🙂 Speaking of prayer, it is also going to be interesting to see what happens in Spain & Portugal this October on the 100th anniversary of Our Lady of Fatima. The town of Fatima was named for a highly regarded woman who converted to Christianity from Islam, and that is where our Lady appeared in 1917. For those who don’t know, read up on the politics in the area at the time, and what hey did to the 3 little children who saw the apparitions. It is very interesting.

Yesterday we got a new broiler for steaks. The same one used by Ruth’s Chris Steak House at the Amway Grand in G.R. Nice unit. Instead of our ancient 500-degree flame broiler, which I cleaned for three hours today before putting it in storage, we have this gas-infrared behemoth that runs at 1500 degrees. I thought our kitchen was hot before. Now we ALL need iced rags around our necks. The thing is nice, though. For $20 grand, it had better be. The whole line was rearranged yesterday. Chef, and everyone else on the line, have had their whole line rearranged. The whole mise en place and all that long-gained muscle memory for where to reach for stuff is gone, and changed. With no flames from below, there is no easy way to char a rare steak (black and blue, AKA, Pittsburgh-style), even though the unit is incredible to cook with.
We have two catering jobs tomorrow, with lots of weird things that are not on our menu. I went in tonight, because my radar was going off, and helped these folks close the kitchen. Just to make their lives easier, and to help prep for tomorrow’s jobs. Omelet station: sliced mushrooms, grated white cheddar, diced red pepper, green pepper, onion, chopped bacon. Two flats of eggs, whipped. It’s all ready. Tomorrow I go in at 9, and deal with less stress than ads on this page which don’t exist visually, and cannot be found, even though they play loudly with audio, and pop my screen up to the top of the page when I am typing, making it so my scroll wheel doesn’t work at all, and get both jobs out the door, ready to serve, by 10 A.M.
That last bit is also a daily occurrence, just like the restaurant insanity. I’m guessing, at this rate, in ten years we won’t be able to walk around town without ads being beamed into our optical nerves by invisible drones, with no way of X-ing out of them. And it’s only WordPress that does it, in my experience. No, you cannot scroll down. We want you to be at the top of the page! And you have no choice in the matter! It’s either WordPress or Brave, probably both. But the companies are probably Diverse. So it’s all good. Besides the product.

Ahhhhh yes, Ruth’s Chris…..we used to eat st the original on Briad Street in NOLA, used to be THE place for all local pols to conduct business. It’s been moved to whst some wags say is a more safer location, we just prefer to call it a more convenient location.
Those huge hunks of prime beef sizzling on a red hot plate with a slab of butter dancing on top.
One of the things I’ll have no regrets when they scrape ’em outta my arteries at the autopsy. Steaks to die for.

Filet Mignon is the second-most expensive cut on our menu.
The bone-in ribeye is $52, I believe. Chef makes a peppercorn sauce for it (au poivre) that is the absolute best sauce I’ve ever dipped anything into.
We’re just having trouble with rearranging the line itself, and figuring out how to use this device to char a rare steak, while sweating our faces off.

I learned recently that a T-Bone steak consists of both a filet mignon and a New York strip. The filet is on the litte side of the bone. Filet has almost no fat at all, and is the best beef I’ve ever eaten. You need no A-1™ sauce with this cut.

Found this for you. Until I found this recipe a couple of years ago, I refused to ever buy flank steak, saved my money for fewer occasions of eating steak, but better cuts. I love a rib eye.
Anyhow, this is one of my favorite recipes, entire family loves it. Three tips. I marinate it at least a day in a freezer bag, frequently flipping it over. Take it out an hour at least before cooking. Second, only cook it on a hot grill, and only cook it to medium rare doneness, as stated in recipe. If you like well done, this steak isn’t for you. Third, cover it and let it sit ten minutes, again per recipe.
I love to have leftovers to chop up, heat, and top my salads with.

My dad used to make flank steak all of the time, and I love it. It shouldn’t be overcooked, benefits from a marinade, and cut thinly across the grain of the meat.

Yep, I forgot to say that part about the cutting, but I think it is in the recipe. I love that marinade. This steak is very flavorful, and after marinading and cooking right, is not tough.

Yes. Across the grain, into medallions. Like the shoulder tender, it’s a cheap cut that was once considered inedible unless in a stew (or fajitas). We use it all the time in catering, after sous vide-ing it in a marinade for a few hours, grill it, mark it, and slice into medallions, and it’s always a hit.

If you cook a steak right, I can’t see burying it in A 1 sauce. I want to taste the beef. By the same token, I’ve changed totally the way I cook vegetables. Much simpler. I want to taste the vegetables, very little added to them.

That is my way of cooking too. Maybe a little salt and pepper is all that I want on a good steak, and I eat my veggies (the green ones) cooked lightly, and very plain.

I’ve pretty much needed no A-1 with my husband’s home grilled masterpieces for the past 25 years! He is truly a Backyard Grill King…so our family is spoiled & virtually never buys a steak at a restaurant as they’re as good or better at home (of course $50 steaks are out of range…but I’d love to try one once for comparison)

I bought two glorious ribeyes for our anniversary. Our butcher cut them two inches thick, no bone, great marbling. Just ain’t no good steak houses within 40 miles so we’re gonna sit on the patio and grill ’em…in case of rain there’s the sear-in-cast-iron and broil, not as good but better than pan frying…a sin in this case.
Don’t sweat how it will work, practice and eat the casualties. I agree about the peppercorn sauce…you using the black peppercorns or the multicolored?

based upon a lot of research…I have learned to broil steaks when they are frozen solid, by searing the outside on a very hot skillet or broiler….then to cook slowly in the oven at a low temperature….and the inside stays pink and moist, outside is broiled dark with grill marks, and it has never failed to make a better steak than when I take a perfectly cut, never frozen steak and cook it on a grill on high heat. Never imagined such a thing.

Please forgive the length of this post, but I’ve been wondering: Was the Charlottesville “Unite the Right” rally timed to be a catalyst toward Civil War II? I have a theory that has me scratching my head because it’s, well, a puzzle. Of course, I could be wrong, but I am intrigued.
Thousands of people are going to be overrunning a lot of southern towns with Civil War sites and monuments; the path of totality cuts across a whole lot of what was the Confederacy. For example, Dover, TN, just below Land Between the Lakes in NW TN is expecting 200 THOUSAND people this weekend. (I have close friends there and have visited often.) The population is about 1500 people in/around the town that covers 4 sq miles. Critical during the Civil War for control of the Cumberland River, Ft. Donelson National Park is accessed here and there off Ft. Donalson Parkway (TN SR 461). It is an important, and large, Civil War site. https://www.nps.gov/fodo/index.htm
James Kessler held his rally less than a full week after finally winning his suit to get a permit for the rally. He took no time to advertise, no time for potential attendees to make arrangements to be there. He had to know it would be a powder keg; everyone else certainly did. It has come to my attention that Kessler was also a player in the OWS rallies and was an Obama acolyte. We also know that Soros money is often freely available for any rally that will stir up foment and hatred between the left and right. We also know that Soros is antisemitic. Soros’ agents could easily put together actors both on the left and on the right ensuring some degree of rioting and bloodshed in Charlottesville, getting both sides of the field fired up. Here’s the thing. I’m wondering if the speed with which Kessler organized his rally was timed to occur the week before the solar eclipse, giving the bad actors on the left a week to get worked up into warp drive. That way, they could take advantage of the proximity of those monuments this, the following weekend. Huge crowds, unmanageable for law enforcement would mean that a lot of vandalism could take place and still be a low priority for local LEOs. With the controversy, I have no doubt that many southerners will be willing to protect their sites and/or restrain the vandals, particularly if there is a family heritage connection to the sites. Think of the South strewn with powder kegs…
I’m certainly not hoping this is true, it’s just a gut feeling. If I were going to design a major critical incident in the political sphere, I can’t think of a better way to do it. Identify an enemy, foment hatred on both sides, attack a beloved symbol and the game’s afoot. Or in other words, in this case, CWII gets much closer very quickly.
I’ll be actively praying I’m completely wrong, but what do you guys think? Is my tinfoil tight?
And apologies to you, Stella, if this is the kind of conspiracy stuff you disdain; I rather see it as a potentiality to be sorted out. Seeing these kinds of patterns is how I picked my nickname; it’s sometimes a curse but it’s always interesting…

Doc is surprised, seems my anti-diabetic regimen has not only kept my A1C in the ‘normal’ range but my eyes are great, haven’t changed in five years. Aside from some minor damages from the military they A-OK.
This is the same doc who will let me bring in my guns to fit the glasses and who doesn’t scoff at my alt-pharma supplement use.

I propose the Federal Govt fund the erection of a Trump Monument statue for every statue of Civil War Soldiers or Generals that are torn down on the exact same spot. Pay for it from any govt money sent to the local police department there that refused to keep the peace and prevent vandalism.

I refuse to equate thst chopper accident with the ‘march’ on either side, it was not brought down as a result of the incident. It would have had the same malfunction hsd it been there or watching traffic and it cheapens the loss by trying to glue it to the event.

The chopper, manufactured in 2000, was “substantially damaged during an emergency landing following an engine failure” in May of 2010 in Abingdon, Virginia, the NTSB said.
There were two troopers on board and neither was injured.
According to the NTSB, the troopers were on a training mission when they had to land so abruptly that “the helicopter bounced one time” before coming to rest in a field.
Eventually, the NTSB said the cause of the engine failure was “the improper repair of an engine component by a repair facility.”
On Saturday, two troopers on board the helicopter died when they crashed seven miles southwest of the Charlottesville airport.
There was no distress call as the chopper descended into trees and caught fire, according to the NTSB. The last radar contact shows it was flying at just 34 mph at an altitude of 2,300 feet.
Investigators said the helicopter was assisting law enforcement officers as they monitored clashes between white nationalists and counter-protesters in Charlottesville. It had been hovering over downtown Charlottesville for less than 40 minutes before leaving at 4:42 p.m. to provide support for a motorcade carrying Virginia Gov. Terry McAuliffe.
“The NTSB and the Virginia State Police are interviewing witnesses who reported seeing the helicopter in flight shortly before the crash,” the NTSB said in a statement.
A preliminary crash report from the NTSB is expected to be released in a few weeks, but the entire investigation could take as long as 18 months.

Wasn’t trying to imply you were, I was trying to say the press is. Neither side of the march caused the chopper to go down, but the press makes it seem as if the loss is somehow due to its being st the march. It would hsve gone down due to bad maintenance, it was a mstter of tome and not location. Let’s go back and see who did the crappy repair.

IMO, the Charlottesville riots were a planned political attack that was orchestrated and choreagraphed for at least a year before ‘showtime’.

in all fairness….I do not personally believe that the antifa and the white supremacists have the grit, determination, total committment of life and limb, to fight a real nationwide Civil War in our nation today……the warriors on the South were not ordinary men….they were common folks committed to defend their land against the invasion of US Military troops….and I do not wish to argue about why the War was fought…as I absolutely know the full history of the pre Civil War cultures and ethics and politics, as well as the details of exactly how and why the deal started, and what states chose to band together and why and when. Does not matter in this discussion today.
None of these “ideological” groups of gun toting rednecks or liberal white hating lunatics have what it takes to get into solid long term war with killing and being killed while being shot at by non militants if they choose to endanger the rest of us.
Civil War is NOT going to happen over Trump, the Budget, Hillary, the Congress, immigration, taxes, or monument statues.

Don’t know how the Barcelona attacks are being reported in your respective areas but around here they’re being blended, condensed, factoids winnowed out and concatenated with the Charlottesville killings to seemingly minimize the Islamic aspect.
On Wednesday night in Alcanar police responded to a small blast at a house and, while investigating, were met by a second and larger blast. Senior police officials later connect the blast to the Barcelona attack, saying the ocupants were trying to make a bomb to use in the van.
Thursday afternoon we have the Barcelona attack with our local news showing a far lower death toll thsn the European papers with the comparisons to Chsrlotresville inevitably starting.
Thursday evening a car plows through a checkpoint in the outskirts of Barcelona, running over two police officers, car is later found with driver stabbed to death.
Early on Friday morning in Cambrils a car plows into pedestrians in a second attack with one woman killed and seven others injured. Police shoot what are taken to be five terrorists, wearing suicide vests, one of whom had been confirmed to be Moussa Oukabir, a suspect wanted in connection with the Barcelona attack.
Spanish officials are now confirming that the Alcanar blast was an attempt by the Barcelona attackers to mount an even more deadly attack but when their bomb attack blew up in their faces they went for plowing into the crowds instead.
And while we are seeing ‘terrorist’ being thrown around freely we’re also seeing commentators doing yoga-like contortions to avoid using the words ‘Islam’ or ‘Islamic’.

I unplugged from cable and went to streaming tv so I was glad to have Sky News to watch the events in Spain. The first thing I thought of when I heard about the single blast with a second following was a different terrorism MO. When I worked for emergency management we were taught that it’s possible that any first attack could be followed by a second attack on whatever first responders were on scene. Glad that wasn’t the case.
I don’t get the conflation of Charlottesville with the terrorist attack by vehicle, except to water down the terrorist aspect. Do we even know if the guy in Charlottesville did it out of malice or was just scared out of his wits?

Me too. Twenty year old kid. I have a still pic I posted next door, where the rear end of his car was been slammed by a metal ball bat, with several rows deep of protestors in front.
I don’t think he could see that there were two other cars stopped, being surrounded just like he was going to be.

I first ran into secondary blasts to hit first responders in zvirtnam, it’s an oldie basic tactic but has to be continually retaught. Problem is you can’t just sit there when you have casualties, you have to go in.
The Spanish officials have only officially said the attacks are all connected within the last few hours, let’s see when/how the MSM reports it.

I wish we could ship La Raza (or undosUS, as they call themselves now, like all commie organizations tend to rename themselves when their former name gets a tarnish…) over to Spain, in fact. The great American SW didn’t create Mestizos. Spain did. We just happen to be right next door, and from Europe, albeit to the North-East of it, on some big islands.
But they can’t go to Spain, whose language they speak, because they were conquered by the Spanish-speaking people, and take over. They haven’t invented boats. So they come here, because we’re right across the street!
And we pay them to reproduce, while disincentivizing our people from having any children at all. The outcome of this tactic should be fun for all. Not.

Hi Stellarites…I’m still playing catch up on my reading but wanted to drop in Today with a prayer request. My husband’s Christian Rock Band, The Lively Pelts, is playing another gig today in Metro Detroit. The venue is a closed school that was taken over by a local ministry. 4 or 5 bands are coming together to basically play from lunch until dinner, with the Pelts wrapping up the show. Their last show, nearly 2 weeks ago, was accompanied by a number of “attacks” as the Enemy apparently doesn’t like people proclaiming Jesus as Lord & taking back territory from him for our Creator. Please pray for protection, encouragement, equipment & vehicle functionality, and most especially that hearts & minds will be drawn toward the Lord.
God Bless You ALL…& thanks for the wonderful work you do, the love & care consistently on display here, your steadfast determination to stand for Truth, your examples of integrity & tenacity, & your unflinching faithful witness for our Lord &/or biblically-based principles. You Guys Rock!

Recipes vary. I’m doing potatoes, onions, and may even add a few cooked carrots. I’m also adding more seasoning. They just have salt and pepper in most recipes. Who can cook with just salt and pepper?
The old time wives who were lucky to have those two. But not me!

My mom would make her pasties with a half & half mixture of ground beef & ground pork w/ potatoes, onions, carrots, & rutabaga, I think…not sure of seasonings. She usually made it in a very large mixing bowl with a thick pie crust on the top. She really makes the very best pie crust (& lots of very decent pies too). Growing up in Michigan we always just had ketchup with our pasties. My husband, from CO & OK, prefers to cover it with brown gravy (I think he’s trying to turn the pastie into a pot pie)…

A few years ago I met a lady at church who was from up north. Her family had old recipes for tourtiere, French meat pies. They also have pork in them, and are so much easier to make, since they are just pies. I did them a couple of times.

Pasties, pronounced Past–EE, are basically a relatively dry meat & veggie pie I think invented by Finnish wives for the husbands to take into the mines for a hearty & sometimes still warm lunch. They are a “specialty” in Michigan’s Upper Peninsula–UP.
Pasties, Paste–EE have the use you envision…No one wants to see the Yooper pole dancers (if such creatures exist)!
After my husband’s rock concert yesterday one of the other band wives was mentioning other regional events here in Michigan. She mentioned “Melon-fest” down in Monroe which led me to inquire if they would be using a lot of pasties…(your pronunciation)…

Work Skill sets by most represented down to non at all
Percentage that are currently employed in full time jobs and have been there over a year
Percentage that are still attending some school
List of the schools that are represented by participants
Tally of total number of body tattoos on all participants
Number of protestors still living in parent or family dwelling
Number of protestors living in government subsidized housing
The Point IS…..does this mob ACTUALLY represent ANY group that has a large portion of the US population and where are they living by state.

My thought is this: as we know those who do not know history are doomed to repeat it. They are trying to erase slavery from our history. Why – so they can decrease our understanding of it, and slide us further towards it again?

Hello All 🙂 Recently got back from doc appointment in Boston suburb. Left early wondering about traffic from protesters at Boston free speech event. As of 8 miles north of Boston no back-up on highway going south. We did see 2 Vermont small cars in tandem whipping in and out of traffic, going far above the rest of the speeders. On the way back to NH we were caught directly behind a shiny new Volvo with Bernie, UNH, and Resist stickers.(gag) The young man was driving dangerously slow in the middle lane. We watched him reach across the front seat fidgeting about, finally pulling an Ipad from a knapsack. When we were able to pass him he was typing into the Ipad. But justice would soon be served as a NH state trooper vehicle pulled out and started to pull up near him. Texting while driving is illegal in NH. Dear hubby said “Yeah -he’ll probably be posting to fakebook complaining about being pulled over – all while driving!
But what gets me is: Here he is in an expensive car, going to college in a nice, low crime state with low unemployment, and he’s complaining “resist”! Resist what !?! How good his life is? auugghhh! Of course he is too much of a coward to do this in Venezuela.
