Meatloaf – American or Italian?

In the USA we call it meatloaf. In Italy they call it Polpettone.

I have made meatloaf a couple of times lately. It’s a good and fairly reasonably priced dish that can feed a family for a couple of meals or just me for several.

In the past, I used just ground beef in my meatloaf, with a glaze of good old Heinz Ketchup. Sometime I made meatloaf from ground turkey (flavored very differently, of course). Lately, I have been loosely following the method demonstrated by J. Kenji Lopez-Alt, a combo of beef and pork, with a “fancier” glaze, and it is very good.

In the old days (1950’s) “meatloaf mix” was a combo of beef, pork, and veal. As Kenji explains, veal contains a lot of collagen, which acts as a binder. He substitutes powdered gelatin for veal in his meatloaf mixes.

Today, I watched this video by Pasta Grammar for the Italian version of meatloaf – Polpettone, which is a stuffed meatloaf, and in this case it is all ground pork, but you could use all beef, or a mix, if you prefer. I’ve heard of it before, but never made it, although it looks intriguing.

I’m providing videos for both methods. Maybe I’ll try the Italian version some day!

Fermenting Apples, Preserving Spiced Apples for Nutrition

I have never done this, but Ruthann recommends apples as a delicious way to start fermenting. She lives in Iowa, and was brought up Old Mennonite. She and her husband have left the Mennonite faith, but still follow many of the Mennonite ways.

Google it with quotes around it so you get that EXACT phrase. See how much it shows up, VERBATIM, with those EXACT WORDS in that EXACT ORDER in so, so, so many media reports?

John Bolton indicted on 18 counts by federal grand jury

Former White House National Security Advisor John Bolton was indicted Thursday on 18 counts related to the improper handling of classified materials, Fox News Digital has learned.

According to the indictment, Bolton was indicted on eight counts of transmission of National Defense Information and ten counts of retention of National Defense information.

“From on or about April 9, 2018, through at least on or about August 22, 2025, BOLTON abused his position as National Security Advisor by sharing more than a thousand pages of information about his day-to-day activities as the National Security Advisor—including information relating to the national defense which was classified up to the TOP SECRET/SCI level—with two unauthorized individuals, namely Individuals 1 and 2,” the indictment reads. “BOLTON also unlawfully retained documents, writings, and notes relating to the national defense, including information classified up to the TOP SECRET/SCI level, in his home in Montgomery County, Maryland.”
