Morning Stella! Have you ever frozen lemon curd? I’m seeing that you can, but it just seems like it wouldn’t be good.
I decided yesterday to wing it with making a blueberry lemon cake, and I wanted to spread the cake with lemon curd before topping it. It took less than I thought it would, plus since I had a lot of lemons, I made more than I needed.
I also read it will keep up to 4 weeks. I’ve never made it before, so I have no clue about that either.

Wish I could help you, but I’ve never had a surplus of lemon curd. I would probably put it in the frig and find a reason to use the rest of it.

Beer, salami AND acorn squash! Acorn squash is good split in half and baked with butter, salt, pepper and a little jalapeno pepper in the seed well. Yum! Mornin’ Czarina!

Something you don’t see every day Weed, a recommendation to put jalapeno on with acorn squash! I’m not sure whether I’ve ever cooked an acorn squash. I love most of the varieties though.

They’re good! Fork the meat and bake 45 min. to an hour. Good side to pork or meatloaf.

Agree on both counts Wee, It requires the use of a really sharp, heavy duty, knife.
For that reason, I try to buy them early in the season in hope of getting a slightly easier cut.

Labor Day!
I have a recipe for acorn squash. I don’t remember it exactly right now, but you cut it in half, cook it, fill it with apples, cinnamon, brown sugar, walnuts, and raisins, then bake it a while. My son loved it when he was little.

Afternoon, All. Had trouble getting to sleep last night, then slept in late and was awakened by a monsoon. Nice! It has been raining for the last hour, only not as hard. Loki went out into the rain and peed, but figures she can go poop later.
My son put up my new solar lights and they are almost perfect. They just need a slight adjustment in direction. I am even pleased with how bright they are.
