Chicken Enchilada Skillet

I made this for my birthday, and it was good. I’m making it again today. Of course it isn’t really enchiladas; more like deluxe nachos! Use a hot or medium enchilada sauce (green or red) or salsa if you like more heat. The recipe starts at 3:03 of the video:

    If you live north of Oklahoma, y’all better start out with the mild or maybe medium sauce. Based on experience with my Pop, better too mild than a tad too warm. This sounds really good. πŸ˜‰

      I like the medium heat myself, and extra salsa on top, with sour cream. Green onion would be good too. You could make this with ground beef instead of chicken. Tonight I cooked boneless chicken thighs, and added a chopped bell pepper along with the onion, because it needed to be used. Easy to make and versatile. Reheats well too.
