    Good morning folks. Made it through a challenging week, I’m feeling good after a long cold, or whatever the virus of the day is, and week one of homeschool academy classes went well for my grandson. Peopleing for me was better than expected as well. We shall rejoice, and thank God!

      Thanks T, and good morning. We have a buffet this morning, you get choices, scrambled or fried, sausage or bacon. Now let’s mix it up, cuz I think fried eggs are better with gravy and biscuits.

      Cooked some deer tenderloin for weekend treat breakfast last week. I added bacon to the pan with it to flavor it, and make the grease for gravy. Left behind the browned bits from the venison cooking as well. It was the best pan of gravy I’ve made in all 49 years.

      I told my husband we could probably make ourselves rich in retirement by opening a breakfast only diner serving that one meal daily for a few hours, four or five days a week. He pointed out that you can just buy venison tenderloin wholesale.

    Stella, have you ever done a breakfast recipe post? I don’t remember. I have been doing what I like to do this week, skipping breakfast.     Now, since they are an ingredient, let’s talk scrambled eggs. I used to not be picky about them, but I am now. My husband, wonderful man that he is, has had to cook for us several times in the last few years after my ankle injury and then later the ankle replacement. Never would I complain or tell him, but his scrambled eggs were just really bad.

    This made me think about what makes them good, so I watched some videos. One, which I cannot find anymore, was Gordon Ramsay. He has newer videos, but the technique and directions are a little different from what I remember of that one.

    Whip the eggs a bit, adding some air to them. I whip mine up pretty good, making them fluffier. I like to add a spoonful or so of heavy cream before whipping. Cook on low heat in butter. You want to cook slow, allowing curds to form. In this video, I remember that Gordon was so emphatic on low, slow cooking that he alternated taking the pan off the heat for a moment, even on low. I use a spatula to gently push the curds around as they start to form, and move the uncooked eggs around the outside into the center, removing them from heat again just before they set, because I don’t like hard cooked eggs. If you want to add seasoning and cheese, top while still hot in the skillet.

    Scrambled eggs are a dish we take for granted, but I’ve had a couple of people remark on my eggs and ask me how to do it since Gordon taught me how. I don’t really know why, but scrambled eggs with cream cooked well taste very, very different from when they are just tossed in and cooked fast and rough.

    Also, they are one of the rare breakfast foods I don’t use bacon grease to cook. 😀

      I’ll take a look at that recipe, as it contains all things that I like. I must get back to low carb, as I am gaining weight! My grandson makes delicious scrambled eggs, and one of the secrets, I am convinced, is to add cream or half and half to the whipped eggs. There is science to that, but I can’t remember where I read about it. Butter definitely.

    Did you guys see Cracker Barrel took a 200 million dollar plunge yesterday? Like I said elsewhere, we’ve stopped eating there for other reasons. Drastic reduction in portion sizes and food quality. Also, they have pretty poor service every time we’ve gone recently.

    That being said, I like the old logo better, but the whole updating stores, logo, selling beer, etc. is getting out of touch with the reason people are customers I think. The nostalgia of the stores was mentioned in a lot of commentary yesterday. And like my husband said months ago, I go to Cracker Barrel for gravy, not beer.

    Another female executive, CEO in this case, goes woke, and headed toward broke. Do I think female executives, managers, and business owners can do as good a job as a man? Heck yeah, I did for many years. But they often don’t.

    I don’t know what it is with women and the woke crap. It’s so often hypocritical, and very counter to our actual best interests. For example, the trans agenda in sports is very anti women.

    Quick thing before I get back to work with the boy. My son, who is an owner/operator trucker with many years in the industry, and I were just discussing the arrest of the illegal alien who killed 3 people. He fled to California, the Lt. Governor of Florida went and got him, and threw the gauntlet at Newsom in a press conference.

    Secretary Duffy and Secretary Rubio joined the battle. Real repercussions coming to these states that don’t follow law and keep us safe.

    Here’s what my son added to the fact that Rubio just halted licensing the illegals. I had no idea about this. My son, who sometimes works with freight brokers, said there are a huge number of immigrant, legal or illegal, brokers who throw deals at their illegal alien buddy friends who drive, and they do it cheap, driving freight rates down for American trucking companies and drivers.

    It gets better though. Many, a great many of these drivers are completely uninsured. The paperwork they have to have to stay on the road, the papers that get checked by law enforcement officials, DOT, at weigh stations, etc. has been completely forged by the brokers for the drivers.

    It looks like Louisiana is getting serious about child rape. I do doubt that this will fly. Some of the commenters think it would be better to put them to death because that is the only way to really stop them.
