Morning czarina! I LOVE Creamsicles! I think I might take out my popsicle molds and make some healthy ones. I saw a recipe for ones made with coconut milk, raspberries and pineapple, and I have everything to make them.

Afternoon All. Another sunny, slightly cool day.
I got my car back late yesterday and the window is fixed, the oil is changed and all maintenance work is done for probably another year. Cost a lot more than I was expecting. 😦

Do any of you prepare pork tenderloin? I did not until recently, and I love it as an alternative to beef. My last Costco order I got a package of 4 tenderloins for about $15.00 ($2.83/lb.), which feeds me lavishly for a very long time. And it is quick to prepare. I coat with an herb rub, brown in a skillet, and roast in my countertop oven at 400° for between 15 and 20 minutes, checking to make sure the internal temp is about 145° F, and then resting for a few minutes.

I put it in my crockpot/roaster with broth and Better Than Bullion veggie and cook at low until it falls apart. Eat it sliced, pulled apart, on sandwiches, and in ramen soup.

Having grown up among the corn fields and hog farms of Indiana, there’s only one way to eat pork tenderloin. 😉

Agree with you Stella, they are a lower cost alternative to beef, if you enjoy pork.
I have found it’s a learning curve to keep them juicy, yet sufficiently cooked.
Tasty when well-prepared though.

Good evening! A good instant read thermometer is a big help. My grandson, who is a chef in training, gave me a good one for Christmas two years ago. I already had one, but it was a less expensive analog type.

Good tip on the digital thermometer. I’ve been using an analog version. Need to check on a digital one.
I may also need to check my oven temperature.

I have Thermapen (the original), but there are less expensive ones that are good. I hear that the Thermopop 2 is a good choice for the money (same manufacturer as Thermapen).
