Thanks Lucille, checking this out. We have pretty epic potlucks at our church once a month, and I’m always looking for new recipes. There’s a lineman school in nearby Trenton, Georgia, and we get some in each class who join us for Mass, and love the home cooked foods while away from home.

Seeing lots of pork recipes there. I have to share my newest pork butt recipe with y’all. Normally I’d smoke a small one, but it’s been cold here, and I’ve not been in the mood.
A few days ago I seasoned and browned the pork really well, then braised it four hours in spiced apple cider, cooking it with the fat cap up. I added a bit of water at times, but as the liquid got low, I mainly kept adding in cider.
Best, juiciest one I’ve ever cooked, way outdoing the smoker. All because I had a big bottle of apple cider leftover from the fall that I wanted to use.

Sounds good! I like to chunk mine up and cook with sauerkraut, apple chunks, onions, cider and a bit of apple cider vinegar. I usually add some caraway too.

National Groundhog Day – my local TV station just aired an extensive piece on the various representatives around the country. They use a nutria rat at the zoo in NO.

I know tater tot’s are junk food, but man, I love them. Breakfast, casseroles, whatever. Got a BBQ place in a town near here that does weird but amazing loaded stuff on them.

Mornin’ czarina! I have never knowingly eaten a Tater Tot. Honest! I’m sure they are delicious. I like regular hash (as a kid, we often had leftover roast beef hash, which is very good), but heavenly has is too sweet, I think. As for the rat in NO – !!!!

Years ago there was a move to reduce the nutria population by getting them on menus of restaurants. Several of the big chefs were invited to make up recipes and serve them at a free party. I remember the sweet and sour nutria from a Chinese restaurant, and something Cajun Paul Prudhome did. All were good. meat a bit tough, and the gamy flavor was no worse than wild duck.

Texan, let’s all get together and send a couple of these makers over to The White House. Elon can use some of the money he’s saving the American taxpayer to hire a coffee steward full time for life. The boys and girls of the Trump Administration would appreciate it, I’m sure.

Mornin’ All. All the rain water froze over last night. I hope the roads aren’t too bad. The big winter storm pretty much missed us and half the sky is cloudy and half is completely clear this morning.
Getting ready to go to church. It is so much closer here.
Oh, yes, somebody moved into my old apartment yesterday. Since I broke the lease, I was worried about having to pay the rent there until somebody moved in. But, that is now a non-problem.
