          None in my immediate area, although we had pond run off yesterday morning, and a greatly swollen little stream on the other side of the house.

          There was a dam failure east of Knoxville and it’s very bad up there, and those poor people in western NC are in terrible shape. The videos out of Asheville and Chimney Rock are awful.

          They were afraid a dam on Lake Lure in NC was going to fail too, but apparently it didn’t.

          As far as Chattanooga, I don’t think we got it as bad as it was projected. Haven’t watched a lot of news though.

          Years ago I had a few pieces of furniture and some dishes with Dutch designs. I had planned to stencil my kitchen. Stencils were big in those days, but I was intimidated, never did it. This was before my painting business days.

          After I ran my business and learned so much about faux finishing and decorative painting, I kinda got mad at myself for all the projects I talked myself out of before.

          Anyhow, I still like the art. It is charming, clean, uncluttered, and lets the work itself pop.

    Addiction Recovery Month

    National Drink Beer Day – well it is the end of Octoberfest. Yes, Octoberfest starts Sept 16 and runs till the start of October.

    National Strawberry Cream Pie Day – have to be imported strawberries, ours were in season last spring

    National North Carolina Day

    National Save Your Photos

    Ghost Hunting Day – they can stay right where they are, I don’t need any

    Public Lands Day – goes well with the next one

    National Hunting and Fishing Day

    National Good Neighbor Day – can’t hurt!

            I am trying this with some of my starter. I have a rich, active starter a year old now, and I currently have three jars going.

            She’s convinced me to add the seeds and get some einkhorn flour, which I knew about but have resisted because I have six flours at least in my pantry right now, and I use every one of them regularly. Okay, potato flour only a couple times a year, but when I want it, I want it.

            So, I change that starter up and dry in the flour, see what happens, and I will also use her lots of flour technique on my starter as is without changing it. That leaves one untouched just in case. I have too much invested in it to risk it.

            If it works like I think it will, that’s how I’ll be doing it, mostly. I do keep some going on the counter a lot and use discard a lot, but it’s not a problem to build that up as needed.

            Thank you Stella, this is great. I’m going to check how she makes her bread, and also on that yogurt. But since my sourdough is so active and good, I don’t think I need to start one from scratch.

            Best thing I’ve watched in a long time!

              I’m going to try her sourdough method from scratch using yogurt and a mix of rye and spelt flour. If it works, I will continue with sourdough. My reasoning is that I don’t bake bread that often, and the constant discard seems a terrible waste to me.

              I haven’t watched her yogurt video, but I will. I have made yogurt at home in an Instant Pot 2 ways; using a powdered starter, and using supermarket yogurt.

            I enjoyed watching this. I noted that the sourdough bread she made was softer with a fine crumb.

            Like you, I was adverse to discarding so much starter. The method she uses makes sense for infrequent users.

            She’s informative, experienced and enthusiastic about her topics.

            Good catch in a sea of sourdough videos.

    morn all. in the 40’s and very sunny this morn. that was the one thing I was concerned about moving up here, lack of sun. hasn’t been a problem.
