Good mornin’, and Happy Monday, kids! Be ready for it because we know the Cackles and Howdy Doody team will be slinging it deep, far, and wide all week long so we have to be ready for it. A little French model today. French fries and coffee are OK. Much better than their politicians. Carpe your coffee!

Hope Grandpa Ervin Knute had a happy life. My paternal grandfather, Joseph, was born in 1876. Their Arkansas plantation was in the northeast, but in the late 1870s a couple of family members moved to Texas.

My paternal 4g-grandfather, born 1810 in KY, settled in NE Arkansas, too. Did yours do cotton or rice? 😀

I’m actually not sure. But they had 18 “workers” so that sounds like cotton. They lost everything, of course, after the War Between the States and the bank would lend them nada. Too bad, so sad!
One of my father’s cousins was the family historian but there are a lot of gaps in the lore. Grandpa talked to me a couple of times, giving me some info. Unfortunately he didn’t spell the name of their town and I can find nothing which sounds like Shukalok.

Oh yeah, before I start teaching, need to ask advice. I haven’t had a laptop for years. My husband and I both have the bigger iPads, and like them so much that’s just what we use.
My grandson has a computer I’m getting set up for school use. Can anyone recommend anti-virus? I used to use a free version of ADT and it was fine. I don’t know what’s best now.

I’m no tech guy but the McAfee or Norton have never done me wrong. They annoy you with lots of emails and upsells, but they all do that, that I’m aware of.

I’ve used both of those, but I now use WebRoot SecureAnywhere. I think it’s more expensive, but it does a great job, and I have it installed on three devices – laptop, Kindle and my Samsung phone. I can protect up to five devices.

I decided to make chicken and dumplings tonight. Not keto, but I love it. I already got the rotisserie chicken off the bone (the last of it) and chopped my veggies (no celery, but I had carrots, onion and mushrooms). I have frozen concentrated chicken stock in the freezer. I suppose I could make “keto” dumplings, but I’m sure they aren’t as good.
ADD: I’m going to add frozen peas too.

Normally I’m not really a big dumpling fan, although my husband really loves chicken and dumplings. But I recently found a recipe for tomato soup with Cheddar Bay dumplings. I’m sticking with my favorite tomato soup recipe, but I’ll be trying those dumplings out with it.
Recently one of my sons reminded me of a big family favorite I used to make on Fridays. Haven’t done it in years, and it couldn’t be easier.
Mix a can of tomato soup and one of French onion. I served it with grilled cheese sandwiches on Fridays or days I needed a break. It is surprisingly good. And I’m not much of a fan of canned soup.

Sounds good! I love grilled cheese sandwiches. That sandwich with tomato soup was a school lunch choice on Fridays way back when. I think the Friday alternative was fish sticks. Or mac and cheese.
Btw, I make the big fluffy dumplings, not the small ones.

I don’t like dumplings, either – but I cook many things with French Onion soup. A plain ol’ roast (if you’re not much of a cook, like me) with a can of beef broth and a can of French onion is purty tasty. And all the veg, of course.

I love pot roast. I don’t use onion soup, but I do cook the roast with a large onion, cut up, wine (either white or red), bay leaves and thyme. Sometimes I use stock (my own) and sometimes just water. Either way, it turns out great. Another thing I sometimes do is spread horseradish on the browned meat before the long braise. It has a sweet flavor when cooked. Way back when I would add sour cream to my gravy, which is also delicious. Now I’m more likely to add sauteed mushrooms.
