One thing I’ll add, about separating eggs. I use 3 bowls. I crack each egg one at a time over one bowl, then put the yolk into another, and the white into a 3rd. I separate them with my hand, just like Bri does, except that I have the additional insurance of the “separation bowl” in case a yolk breaks, thereby not contaminating all of the egg whites.
