    Mornin’ All. 25* here and overcast. Kind of a gray day. Have to do some housekeeping that I have let go. And, then, I have to look at putting away the Christmas decorations. I know……..it is getting a little late. I am tempted to leave them up, along with the tree, but I enjoyed so much having the granddaughters decorate the tree that I want to do it again this year.

    Looks like some bad weather coming across the center of the States. Hope everyone stays safe.

    Sharing an experience I had yesterday. I ordered some cryovac lamb shanks to make a nice braise. When I opened the package, the smell (more like stink) was overwhelmingly gamey. I rinsed the lamb and dried it before cooking. It was still gamey. I ate some of the finished dish last night. It was okay, but the gaminess remained. I don’t think I want to eat the rest of it. It wasn’t bad, just very strong.

      People ate gamey meat a lot before refrigeration. Got around it by drying it, and putting on herbs & spices and tomato sauce. There is a restaurant in Tampa, Bern’s Steak House, which prides itself in “aged” meat. Once it is thoroughly cooked you know it is safe, just that you have to overcome the sense it is “bad”.

        Instead of leftover lamb (there isn’t that much since I only made two shanks, which are mostly bones), I made creamy sausage and blue cheese penne pasta with peas and mushrooms. Quick and delicious, and lots of leftovers.

        I used mild loose Italian sausage and added fennel seed. I didn’t have gorgonzola (which is better), but I had regular blue cheese. Cook sausage, onion, mushrooms, frozen peas. Add and melt cheese, then add cream and heat through. Put the cooked penne in the sauce to finish.

      Gamey I’m not into, although I do remember that venison is very good tasting and some folks have said it’s gamey. Plus my sister used to serve bison steaks which were excellent. Never once have eaten lamb, though, gamey or not.

      My nephews hunt moose and say they really like that served with mushrooms. I haven’t tried it.

        I love bison! I don’t mind a bit of gamey, but this was extreme. When I opened the package the smell was overwhelming. I have made lamb before – ground lamb in shepherd’s pie and boneless leg of lamb. They were delicious.

        I did a search on the internet, and apparently the gamey experience with cryovac lamb is common.

          It happens with other meats that are cryovaced as well. The smell is supposed to diminish significantly in 15 -20 minutes after opening. That rinse and dry should have helped.

          The taste should not have been substandard. I wonder how the meat was handled before the package was sealed.
