    Mornin’ Lucille and Christopher and whoever signs on later. 🙂 Hope you have a nice day. Just sunny here. I have a chiropractor appt. this morning and I have been wearing a mask when I go. My mask fell apart. Oh, well. Don’t know what I will do.

      His voice brings back sweet memories of my old friend, Jacob. He was originaly from Russia, but has lived all over the world. We sat side by side at work in the Dental Laboratory. Over the years, we became good friends, and I helped him with his English a lot. I baked him a cake for his 65th birthday, and He said it was the first cake anyone had ever baked for him! He had us all with tears in our eyes. He was so grateful.
      He told me a lot of stories about Russia, and he had a hard life. He was persecuted for being a Jew. He managed to escape long ago, and went to Israel and became a Rabbi. He also lived in NY for a long time. Why he ended up in Georgia was because we have a better climate, and lots of jobs in Dental Labs. He was a very talented Technician!

        Sweet story. So many dear people in the world who haven’t had the easiest lives. You just want to take them all in and make them feel loved.

          He was loved by some of us that worked with him, but I did notice a lot of prejudice from a lot of people in the lab. It just made me work harder to make him feel welcome, and he was a really interesting character! We also had some very deep conversations, not just about Judaism, but also us Southern Baptists! He really enriched my life and gave me new perspectives .

    I had the remainder of a rotisserie chicken, so I made this recipe (baked chicken quesadillas). I made half of the ingredients called for, which makes two large dinners for me (4 10″ tortillas). I used grated Colby-Jack cheese and one chopped up chipotle pepper in adobo. I’ll bet this would be good with a drained can of white beans instead of chicken, if you wanted to go vegetarian. I didn’t add any salt, although it calls for it. Served with more sour cream and salsa.
