When I was a teenager we went to Newport Beach several times every summer to meet family members who had their sailboat anchored there…

There used to be miles of mud and grasslands down deep in Plaquemines Parish’ It ran from he Mississippi river that used to feed and build it waaaaaay out into the Gulf. When the built the levees the sediment couldn’t get out to support the land and its final blow was the state allowing oil exploration firms to dig long canals through it, that assisted the erosion that made the hundreds of miles of that land leaving the Gulf lapping up against the friver’s levees.
Anyway, there used to be a wide ship channel from Empire out to the Gulf, shrimp and fishing boats would use it to fuel and ice up going out to fish. A friend of mine, now long gone, would take me down there on his 18 foot boat rigged to drag a short trawl for shrimp. We’;d trawl that channel, it wouldn’t be hard to each fill a 48-quart cooler each with shrimp and if we brought fishing poles to use a few of those shrimp to catch a few redfish or speckled trout. As you were trolling for shrimp it wasn’t unusual for dolphins to swim slowly alongside of the boat, they knew we were stirring up the bottom and it would move the fish. Sometime it seemed as if they were just swimming with you for something to do, they’d be within 18 inches to two feet away, just cruising along.
All gone now, long gone. The dolphins are still there but it’s all open water. Sadly many have died this year as the opening of the spillway to reduce the pressure on the levees put billions of gallons of fresh water into the sound. The dolphins will swim the brackish water as they do the salt but too long of an exposure to fresh water, as we have now, causes them a number of health issues, more than a few fatal.

…It’s possible, but I doubt there were any tsunamis anywhere along the CA coast when I was a kid and it wouldn’t have mattered much seeing as it was nowhere near as built up then.

I was looking at a recipe for fluffy pancakes the other day that used cottage cheese to create the fluffyness.

I made them with cottage cheese once, but they weren’t really fluffy. But, mine never are. 🙄

If you mix the liquid and dry ingredients too much, you won’t get as much rise. Small lumps are okay.

For biscuits, I use a frozen stick of butter. Hold the frozen stick of butter with a couple of paper towels and grate it on the coarse side of the grater directly into the pre-mixed dry ingredients. Then use two cold bench scrapers or large forks (put them in the freezer for a bit) to mix just until mixed (yes, it will look lumpy, don’t worry!). Then pat down the dough to about 1-inch thickness, and use a sharp cutter to cut out the biscuts. Do not twist the cutter into the dough — this will seal of the layers and they won’t rise as much while baking. A clean “push through” to cut them will allow the layers to expand evenly while baking.
See? I DO know something about carbs! LOL!

Exactly. I don’t even cut mine, just gently shape and drop. Two other things that make a huge difference. Never make biscuits without buttermilk, and I put mine in a cake pan instead of on a cookie sheet. Since reading that tip, without even changing the recipe they have gotten much more rise.

Nobody in my house likes to drink buttermilk, so I never have the fresh stuff on hand. Do you consider it ok to add vinegar to milk as a substitute?

It’s about the same, I think; neither is as good as the real thing, but adequate for baking. The powder is shelf stable, of course.

I’ve posted before that I’ve used waffles as a foundation for meals. I’ve made them using flour and corn meal, the latter working with various meats from chili to fajitas. I’ve put bacon and eggs on the flour ones, they work with ham/red-eye gravy as topping too.
Those v50 pounds are juuuuuust around any plated corner.

OK, you crumble the bacon, put it inside the pancake mix, fry the pancakes in a little bacon grease and then top with bacon. Meet you halfway on that.

I just had one of those ‘missing it’ moments when, in the old old Army days, we’d have breakfast in a company chow hall. Zero-dark-thirty and you’d take your squad/platoon to eat at a mess that would be staffed (can’t say ‘manned’ no mo’) by your own mess crew, it was bonding.
Last time I did that was ’99 at Ft Gordon. It was 0530, I was on assignment pending a trip. I was a senior NCO so ate independently and went to breakfast with some other NCOs who qualified as ‘older than ‘ at that time, we’d all been in over 20 and one guy had been in basic with me in ’65. There were companies of trainees, Ft Gordon’s hosts the Army signal school, and they were forming up for chow. These kids were almost our grandkids’ ages, even their instructors didn’t recognize some of our Vietnam right shoulder patches…deja vu.
There was a mixed squad of trainees approaching the front doors so our small group stopped to let them and their squad leader in. The squad leader stopped his squad and said we could go ahead. The Marine Master Sergeant with us was the first to speak up as he gently told the squad leader that we always eat by rank, lowest first. The squad went first but I still think that the Marine sergeant would have liked to have been a bit more…firm…with that young sergeant had his squad not have been there.

Don’t know if they still do it but under field, and usually garrison, conditions when feeding by unit the chow line would go from lowest first through the ranks. Presumably as the lowest ranks usually do the grunt work and most in need of food. The higher ranks are usually more administrators and caloric needs for that are lesser.

Photo 1’s only redeeming feature is that the bacon is in front (probably trying to escape from the onslaught of odious banana slices that have no place on the breakfast table). Photo 2 is fab. I even like photo 3 because I love the donut on top (forget the name).

Nice photo of Dubrovnic! Sadly, this little gem on the ocean is overrun with cruise ship hooligans. You can barely walk inside the walled city during the day. Noise and crowds — just awful. But it is a beautiful city, and the ocean is crystal clear and a gorgeous dark blue.
But notable in the city in one of the side streets is one of the oldest synagogues in Europe, started by Jews who were ejected from Spain in 1492. It has been in constant use since, and is no bigger than a small townhouse. Common area on first floor, synagogue on second floor.

A long time ago I dated a guy from this part of the world, and his sister ran a guest house in Dubrovnik. That was way back during the Tito days, and she did a lot of cash under the table business, he told me.

Wellll, today’s our anniversary…or yesterday, we were never really sure but we know it’s one of the two days. Anywho, our gray cat brought us an anniversary present! When she came in she brought us a fat, live, wriggly field mouse and dropped it right on the kitchen floor.
She was a bit taken back when we didn’t hit all four and chase it. When it ran under the range table she went under and chased it out, again leaving it to us. The 22 pound inside cat sort of made a halfhearted attempt at it but mice aren’t really its thing no mo’, and the old dog (who was quite a good mouser) thought it just too much trouble.
Our furry anniversary present is now running around the pantry some where, the grey cat is asleep on Czarina and the weight of any demousing operation is now squarely on the black & white cat when he comes in. Not an altogether unusual anniversary for us, as they go, whenever they are.

I guess so, she usually brings dead ones to share, but this was a special occasion. Old dog is suggesting we go down to a Home Depot parking lot and hire an illegal immigrant cat that does daywork to take care of it.
