Sage (salvia officinalis) is a great shrub to have in your garden. I’m sure you all know that it is great in your Thanksgiving stuffing, delicious with fresh pork, and adds great flavor to sausages. I occasionally do a really delicious dish of fresh sage and fried potatoes. Here’s a roasted potato dish you might want to try.

    Being sorta short on duck fat I’m betting that pig fat off of a good roast or beef fat, I’m gonna try both.

    I think Yukon Gold potatoes would work well too, even the larger ones. As long as the potato is cooked thru I don’t think it matters much about the size of the chunks. If someone has an issue with the size of my potato chunks I’ll direct them to the two Sonics, each 14 miles in either direction.

    I’ll use the chopped, jar garlic as we like the stronger garlic flavor and probably some onion powder but then our dietary habits are probably a good part of why people avoid us,

    I’m thinking of using bagna cauda to coat the potatoes and cooking them on a grill with some wood chips thrown on the briquetts. Maybe some cheese sprinkled on top a minute or two before you pull them off the grill…? Gotta go to bed, this is moving me towards the kitchen.

      We used to have an olde time family eaterie out by where I worked, close to the Pontchartrain lakefront. It was 50s style, nothing fancy, just old tables, old pictures on the wall an eminently eatable traditional NOLS blue-collar food.

      One of my favs was their french fry po’boy. Hot, fresh double-fried french fries on a 6 or 12 inch local loaf of French Bread with lettuce, tomato and mayo and, if you are hard-corp, beef gravy.

      Use your own home-grown little red potatoes. Best thing in the world.
      Our Amish orchard sells wild duck, so will give this a try in the fall.

        We generally have to grow potato-potatoes in barrels as there are things in and above the ground that just love them. Them again, the little red potato is a crawfish or shrimp boil standard here so they’re m,ore available than aspirin so it’s much easier to just buy them.

        This ain’t duck country, hunt ’em yes but raise ’em no, we have a hard time finding them in the store. Duck and goose just ain’t on the menu down here.

      I love potatoes! Here’s the dish that I make, which is very simple. It is called “Potatoes with Fresh Sage & Garlic”. Came to me from a cookbook by Biba Caggiano. She had a show on the Food Network years ago. She said that the mother of a childhood friend made potatoes this way.

      4 large boiling potatoes
      3 TB unsalted butter
      1 TB oil
      5 or 6 fresh sage leaves
      2 garlic cloves, lightly crushed and peeled
      Salt to taste

      Peel and cut the potatoes into medium thick slices. Put 2″ of water in a large skillet and bring the water to a boil. Add the potatoes and boil for 2 or 3 minutes. Drain the potatoes and pat dry.

      Dry the skillet and put it back on the heat with the butter and oil. When the butter foams, add the potatoes, sage and garlic. Cook uncovered over medium heat until the potatoes turn lightly golden. Transfer the potatoes to paper towels to remove the excess fat. Sprinkle with salt and serve.

        You pretty well have bagna cauda there with the butter (extra virgin olive_) oil and garlic (can’t have too much, only too little). I use equal amounts unsalted butter and olive oil and lotsa garlic with dried porcini mushrooms and real Italian anchovies(not those pale and pathetic pieces of catfish bait sold in stores).

        It’s great over pasta or just dipping French/Italian bread into. I’ve sauteed raw shrimp in it and put it over potatoes, didn’t think about basting roasted potatoes with it.

        It also makes great garlic bread, it may need more garlic, depending upon your tastes, and putting mozzarella, povolone and/or parmesan on it. Gets really close to a pizza and meal in itself if you get carried away.Yeah, you can put prosciutto on it too. See what I mean about getting carried away?

          Bagna cauda is the Italian’s version of fondue. They dip all kinds of things into it – bread, vegetables etc.

            For years it’s been my primary artery-blocking treat. I’ve used it as a dip, a base for garlic bread and a sautee agent for fish, shrimp and chicken.
            If I could have my blood replaced with it I would.

      You can buy duck fat on line. It must be popular because there are a lot of options, but I’m sure your suggestion of fat substitutes will work. Yukon Gold would work great; they are my favorite.

        Yeah, I thought of that but it’s rendered and stabilized and I’m a fresh-rendered fat type. I make an exception for lard as it’s difficult to get otherwise.

        I’ll check the custom butcher in town to see if he can get one and maybe the Asian big-box store in NOLA will sell me a few ‘raw’ as they make Peking duck by the truck full.

          I have no issue with the private wall but having been in government and working directly with politicians I’m just betting about what’s going on in the background.

          I don’t celebrate the wins, I consider those maintaining the normals, I just look ahead for the next ambush.

          BTW, those ‘criminal justice reforms’ gov Edwards talks about include moves to return voting privileges to all felons, moving to making hiring of felons almost mandatory and dumping prisoners back out on the streets en masse. He’s a Democrat, his religious tenets are behind his signing the bill.

              OK, I missed the turn. It’s nice they busted the leader but as with the cartels it won’t damage it, there’s always a replacement waiting in the wings. Maruffo’s arrest won’t hurt their operations any more than did el Chapops, the cartel is the important thing, not it’s leaders. It’s nice we nailed him, they also nailed 11 real nasty cartel operators last week, but it’s like bailing out Lake Erie with a teacup. I’m all for tactical nuke strikes and if Obrador complains I’m sure we have the GPS coordinates for his office.

    I’m late to the game with sage. My mother, not the best cook by any means, used to massacre dressing by putting in so much of the cheap crap sage seasoning that the dressing turned green. I despised it, and became wary of even using sage.

    Eventually I learned better, and now fresh sage is a favorite, especially as one of the aromatics I stuff poultry with.

    We’re now waiting on the delivery of the lumber and the garage build should start next Wednesday….

    In the meantime….My old friends are coming out of storage and it is a joy to see them.
