  3. Catering was fun today, and challenging for all of us. 130 people eating and partying. Excellent crew, and even former Bossman came and helped me and Chef, and brought his head line cook (19 years old!) in to help us. FOH crew was also incredible, because all of them have also been doing that side for years and are pros.

    Another kid came over from current Bossman’s other restaurant, who didn’t even have foreknowledge of this event at all. He thought he was just coming in to work in his place for a shift. He is now more knowledgable regarding cooking, catering, plating, being a mule, and every other thing that the customers need.

    4 days of prep, we fed them all in less than one hour. Bread plates. Salads, dressed with balsamic at the time they go out. (three of us, me and two teens, made 130 salads in 20 minutes, all the same) A whole speed-rack full of carefully-constructed salads. Gone in 20 seconds. And we’re washing 130 plates. And that’s just the salad plates. Restocking the buffet with hotel pans full of carved beef and carved spinach+incredible mix, mashed Yukon Golds by Wooly, and steamed green bean & carrots. Creating 6 dessert trays with 6 different desserts.

    The 19 year-old was a pro at designing the dessert trays. Some were 3-level chrome trees, some were chrome trays. Absolute genius. I should have taken pics. I had arranged a couple, with the brownies covered in a shining ganche, the lemon-squares, and the wonderful little cheesecake cupcakes, all unique. He took my work apart, right in front of me. And made it better.

    Every restaurant owner in this town will do anything for any other restaurant owner in this town. Including come and help. And donate butter. And steak knives. And Sternos. All of ’em.

      It’s great to watch planning evolve in a success. I’ve helped caterers a few times and I salute you, I find war much easier to deal with.

    • Nice! It’s cool to hear that all the owners will pitch and help each other when there’s a need. i would have thought there would have been more competition between them then willingness to help, so it’s great to hear that it’s the other way around.

      • There is competition, but it’s not cutthroat. The way I see it, this town is a cruise ship that doesn’t leave port. Whatever business you own, retail or food, you’re all on the same ship. Need tomatoes on the fly? Or dish soap? Send someone over to that other restaurant, and invariably, they will donate and “pay it forward”. They know we’ll do the same sometime in the near future.

        The business owners in this town hang out at each others’ bars with the other owners, go to each others’ church functions, are part of each others’ golf leagues and social clubs.

        It really is pretty cool.

        And, like Czar noted, it is really fun at the end, knowing that a plan came together.

    Tucker just came in from a play session in the back yard – feet and legs coated in mud. Apparently digging a hole was his idea of fun.

    ADD: Kitchen floor is now also coated in mud. Sort of cleaned him up (he needs a bath) and crated him before he jumped all over the white cabinets.

      My cousin bought her nephew a real drum set when he was about 4. He wanted to be just like his uncle. I’m not sure how long she and her sister went without talking.

            My two sons always understood me. And, on occasion as they approached their pre-teens, would have a secret laugh at other “adults” who would looking at me with shock when I made certain parenting decisions – – – and I made a lot of them, seeing as their Dad and I were divorced for six and half years of that very key time…..then we married one another again, having learned a thing a three – we hoped. We had. We had thirty years more before he left us four years ago.

            But yeah, my sons thought I was a hoot…especially when they hadn’t crossed me. If they HAD crossed me, they knew exactly what was going to happen, how long it would take, and when it would be over. Saved me a lot of handwringing. I obviously made mistakes, but excessive handwringing wasn’t among them.

        Radio Shack used to have a yellow plastic helmet with a flashing red light on top and a loud siren that made a lot of different irritating sounds. That used to be a fav of mine.

          My friend had two sons. The youngest had children when he was young. The older brother gave them all kinds of noisy presents. Then, about 10 years later the older one started his family and, as they say, paybacks a bitch. 🙄

            • I vote for the clarinet. Aside from the vuvuzela, or the duck-call, the most annoying instrument to hear someone learn to play. It’s like the opposite of a full-size harp in beauty.

                • Give ’em just the reed and mouthpiece first. Tell them the rest of the clarinet is on order, and is a few weeks out, but to practice on that.

                  John Zorn did exactly that on Mr. Bungle’s album Mr. Bungle, which is completely not safe for work, and is insanity put to audio. It sounded real ugly. It was supposed to.

                  Didn’t realize he was adept at guitar until just now. That above is musical genius.

                  I think if I gave a kid an instrument, I would first show them all the critically-acclaimed, best performers on that instrument. Drums? Neal Peart, etc. Bass? Victor Wooten, etc.

                  Then I would show them Walk off the Earth, and tell them that everything is a potential instrument, including their voice, and tables and chairs, and whippy tubes.

          We had M-80’s, air horns, headlight bands for our heads and on and on. Though the best was when he came home with 4 puppies in a box that lady said she was going to turn loose in a field in WI.

          I forgot to mention he once bought a waterproof radio for us and then proceeded to throw it into the lake while we were swimming in the “deep hole” of course it wasn’t a floating radio just a waterproof radio. Us kids thought it was hysterical, my mom not so much.

      when I was a young father of boys, my brother gave one a set of drums for Christmas, age about 10….I gave the other boy a pocketknife, age 7, and asked him if he knew what was inside of a drum.

      then left everyone alone for awhile…

      I’m really glad that I did, I absolutely loved it. I almost quit reading it about a third of the way into it, but I hung in there. Thanks for telling me about it. I wish that he had more books in this time frame, rather than the sci fi books. I would definitely buy them.

      Firefox won’t let me use their browser since my MiniMac has been updated as far as possible and that’s not good enough. So that notification doesn’t show up next to my AdBlock hand.

      What does it do if you click on it…hopefully not blow up your computer?

      One of these days no browser will work for me and I’ll have to give up surfing and posting unless I win the lottery.
