    We have two line cooks in the pokey now. Mothers Day weekend. It’s going to be fun. Depending on your definition of fun. Chef is the only line cook right now. We’re importing one from the other restaurant for the next three days.

    I think a Mothers Day tradition, in the leadup, should be Mamma jokes. I’ll begin:

    “I told yo mamma it was chilly outside, and she ran out the door with a bowl and spoon!”

          Can you roll a prep chef over to line? Amazing how many resturant and kitchen staff end up in jail for one thing or another. While I did security details for a couple of restaurants I noticed the ‘absences’, Also noticed how many college students working the floor part time ended getting caught up in the nightlife after closing and dropping out of school.

            I could move to the line. Chef is an instructor. I’ve worked with him for the greater part of a decade. He’s always in teaching mode. Thing is, no three minimum-wage kids can do what I do on dish, working in tandem. I do dish. I do prep. I could do the line, easy.

            I’ve plated, assembly-line style, a hundred weddings and corporate Christmas parties.

            But in 10 years, I’ve not found anyone who can BE that driveshaft that is dish, besides a diminutive ancient Mehican lady who pretends to not understand English, and yet laughs at your jokes, and nods. She still works for my old place.

            Kid — “There must be a way to wash these pie-plates faster!” :scrubs slowly: :sets dish down on stack: :repeats:

            Chef — :pushes Kid aside: “Yes! There is!” :scrubs really, really fast and stacks even faster:

            I almost fell down laughing.

        Every now and then we get broccoli that’s already pre-cut smaller than whole.

        Every thing else on the menu is made from scratch. Chef goes on vacay next Tuesday. Man, oh man.

        We’re missing two line cooks. I’m quite sure they dindoo nuffin. One prep cook put in his two-week today. The better one. He got a factory job in Holland. Good thing is, one current resident of County comes back in two weeks. He’s fun. Fun.ctionally illiterate, too.

        Gonna be a fun couple of weeks. He’s going to the Rock & Roll Hall of Fame. And several MLB games. He needs it.

          Many moons ago we used to go to several well-known restaurants with friends before they opened and watch the prep chefs getbthings ready. Prudhomme had buyers who went hundreds of miles for ingredients, none of this stuff out of supply houses, his meat especially was bought in a number of states after on-site inspections.
          At one place you’d walk thru the active kitchen to get to the rear seating…or they had an old painted-up mini pickup truck parked at the curb with seating for four in the bed.
          We used to work a charity dinner that was prepared by a dozen or more of the most noted female chefs in town. The menu was a surprise, it depended upon what the various suppliers donated…chefs generally only had a few days at most to build a menu from ‘surprise!’. We generally did all of the grunt work in the kitchen but when you had the likes of Lee Batnes, Susan Spicer and Leah Chase running around cooking their heads off it was far more pleasure than work.

            You, as a customer, should be able to see, greet, and be welcomed by the people who do what we do in the BOH. Half of you have been there. You need, before you sit down and get your menus, to see the people who love food and work to make you happy.

            That is such a good idea.

              Restaurants were different pre-K, now they are heavily tourist oriented. We used to have lots of mon-and-pop eateries, even small family-owned grocery stores with restaurants in them. One even had a bar.
              Now it’s a new generation of chef’s with minimal interest in traditional Cajun/Creole foods. ‘Lite’ foods, foods that seeme more at home in Chicago or LA than here. Dining areas are kitsch and sterile, staff are polite but not as engaging, then again it fits the new New Orleanians and the older diners are dieing out. All hail arugula with Chicago-made Cajun seasoning.

The leaders of tomorrow are coming of age in the totalitarian campus states of today. When one of those polls emerge showing that 7 out of 10 college students want to ban offensive speech, it’s not a generational phenomenon so much as it is environmental indoctrination.

    A Democratic lawmaker from California referred to Middle America as “Podunk, USA,” during a committee meeting last week, several sources inside the meeting told the Washington Free Beacon.

    Remarks by Rep. Anna Eshoo (D., Calif.) during a closed-door Energy and Commerce Committee meeting with Federal Communications Commission Chairman Ajit Pai raised eyebrows from those present.

    The moment occurred when Eshoo pushed back against Pai when he was discussing expanding broadband access to rural areas.

    Pai said that eliminating Title II net neutrality rules would benefit places he has traveled to, such as Parsons, Kan., Elverson, Pa., and Cadillac, Mich.

    Sources inside the meeting told the Free Beacon that Eshoo was frustrated with Pai’s comments. She wished out loud that Pai would stop talking about “Podunk, USA” and instead be more concerned about the venture capitalists on Sand Hill Road in her district near Palo Alto, according to the sources.

      That’s the first time I’ve seen Sabo. I almost didn’t want to see the guy, ever. Like Zombie, I liked his mystique, the legend of him.

      When Zombie outed herself as a female, way back in the LGF days, I also didn’t want to know. I preferred not knowing the person, just that what the person was doing was making lefties crazy.

    Watching acpiece on TV (Train Wreck Syndrome) about a 15-year old son who’s changing his gender to female while mom’s changing her gender to male. Aside from pushing my ‘ick factor’ needle way up on the scale, it makes we wonder if we could extend that spay-neuter program a bit.
    On the plus side this familial journey could prove an advertising boon for the recycling movement.
