evening/morning Stellars.
Yesterday was a well-oiled machine. From 8 AM to 10:30 PM, two catering jobs in two different places. One was continental breakfast and lunch buffet (with chicken breast, flank steak strips, and assorted sides), for a group of 60 power plant outage workers, the other, at our restaurant, was all weird stuff with lots of prep steps. It was all appetizers, like tapas. Steak tartare deviled eggs, breaded crab cakes, (all made in house), and zingers (half-strip of bacon wrapped around a dried apricot and a jalapeno slice, baked at 350 for 20 minutes on a sheet tray). Sliders on mini-buns made with more flank steak strips. And more.
And the walk-ins were steady.
Chef kept his cool, even though he’s overworked. He’s got a good, pro crew.
At one point tonight he was cooking 16 steaks at a time, all different cuts, and different temps. All while cooking the apps for the party, too.
At the end of a day like that, we’re happy, because we did it, and at various point hanging and shaking our heads like coal miners, with that 1000-yard stare.

I just remembered the beginning to my day. Drive to the event hall that we’ve been setting up for the last two days, then wait.
Why wait. It’s a new place now, under Health Dep’t law. Even though the owner is still the same owner. We have to wait for the County Health Dep’t comes in. We’re told to dread and fear this lady. And that she’s really mean. When she drives in, I’m out back smoking a cigarette, and welcome her, and introductions are made — professional dishwasher (she laughed), 19-year HD worker. Dang. Wearing a latex glove on that hand with the bandage on it from the cut I received yesterday.
She walked in. Imperious. Like Darth Vader. She turned her head, in stride, said “You need to get a hair restraint now.”
Because he’s a mulatto with a substantial mop on his head. We, wide-eyed and scared (imagine getting shut down an hour before you have to serve this all-day crowd by the County), both knew that we don’t have hair-nets! What do we DO?
System D, folks. Another catering pro went to his trunk, found one of those elastic footies that you wear when catering at rich people’s houses. We put it on his head, and she was satisfied. And we all laughed at him.
She cited us for grease on the side of the oven next to the fryer. Which we didn’t even USE that day, you Statist wench. And the hood-vent filters weren’t shiny enough. Gave us thirty days. I’ma tell the boss to call her Wednesday. We got this.

(I’m kidding. Everyone in this photo is all those. It’s catering. All hands on deck. Up to and including putting every single thing back where it belongs. Baskets, flatware, tables, chairs, chafers. Rental plates. Side plates. Tents. Taping paper balls to the ceiling of a freakin’ circus tent for a wedding on a windy day. You might be a dishwasher, but you’re THERE for the business.)
We have a crew like that now.

It’s a fun occupation. I’m one of the leavens in the loaf, too. I wish I could convince, and I slowly do, Chef to be happy. I was SO angry before. Before I lost my voice. Chef rants at work like I did. Repeats his every compliant or command five times. Dude is my best friend.
I figured that God took away my angry, complaining voice for that reason.
All I did for five years was bring the kitchen down. Then I woke up May 1, spoke with another friend, whose house I built for his now-angelic wife, and I had no voice within 20 minutes. I got my voice back August 1. I didn’t think it would ever come back. It taught me a lesson like no other, was the best thing that ever happened to me.
I was using my powers for evil, and not good.
Before I lost my voice, nobody but me and God heard me sing. For four years, everyone does. People follow suit.
Buddy of mine at work did an experiment. Video. A bunch of actors are on an elevator already, between floors. They are all facing the back wall of the elevator. It stops at a floor, and a guy gets on. He’s visibly perplexed (they did it several times, and the result was always the same), and he or she, facing the door, looks around uncomfortably, and also turns around to face the back wall.
You know what I would do? I’d do a handstand.

My twin’s husband started a restaurant/catering business years ago.. I remember how hard they worked… Now he works for a food service company.. It is a very competitive business…

I remember as a small child, trying to convince my mother I had a twin. I would run to my room, change clothes, then come out, affecting an accent, and ask for cookies or something.
I’m wondering now, years later, if I had truly fooled her, or I had been bribed to go away.

Well my twin is real, but we are fraternal, a funny term for two girls. I am 13 minutes older, which I I am so proud of. Some people have a hard time believing we are twins.

LOL Some friends of ours, years ago had twins. They not only didn’t look like twins, they didn’t look like they came from the same family. The girl was very short and chubby with olive skin and thick black hair. The boy was very long, blond and pale. She looked exactly like her mother and he looked like his dad.

I had neighbors like that when I was in high school. Two boys – one was tall, with dark hair and eyes, and the other was pudgy with blonde hair and light eyes.

Paragraphs 13 and 14 really nail it, IMO (above and below the photo of a man, with the caption “This man is broken…”).
This is what generations of mis-education and psychological manipulation have done to us: created people with aberrant thought-processes, who are cognitively unmoored, who are “no longer sane” (as the author puts it); “almost like they are all possessed”.
I am not sure that that is repairable, this side of a miracle from God.

Life is a zero-sum game in the Marxist mind. For one to succeed, another must fail. Both success and failure are thus viewed as illegitimate.
Since differences produce success or failure, victory or defeat, differences are illegitimate too. We might say that, on average, black men are better at basketball than east Asian men, because on average black men are taller (a critical advantage in basketball). Does this then mean that black men are privileged? Should they be handicapped so that more east Asian men might play in the NBA?
It is a denial of reality for them to think this way. As you say, if one group is privileged, how did they get that privilege in the first place? Why did they get it? What was the mechanism behind it?
These are questions the Marxist cannot think about, because they are deemed wrongthink.

Along this line of thinking is a proposed building code here in Myrtle Beach.. Every new development must include 25% homes for low income people… Think about that. SMH. I think there is a loophole where a developer can buy out of it,,, that makes it extortion. Wish I could find the link….

I absolutely had to go to Walmart today for 1 thing. So I decided to go as early as I could. On the way back I decided to stop at McDonald’s for an egg biscuit. I could hardly get in the parking lot. So I went in and TRIED to use one of the kiosks. If that had been my only choice, I would have gone away hungry. 😦 Thank goodness there was a warm body at the counter to take my order. 🙄

PBS has a WWI special on…It was quite the opposite of what we learned in school.
To me it was almost a propaganda piece against America and being American. In all their specials I do believe that they really crossed the line on this one.

But I see the ‘science’ movement as a way for the oligarchs to get the gullibles to voluntarily walk into the ovens. Science replaces religion as a religion with no morals, only manufactured facts.
The droolers form drum circles and dance to appease Gaia while the scientific elite declare thst great sacrifices must be made by the masses to ensure a reversal and return to an Eden-like existence. Now the masses have to endure the suffering, not the uppercrust for soooooo many reasons. Sorta like that water rationing thing during the California draught. RHIP. Reduce your numbers, retract your lifestyle, rollback consumption and donate your time and life to environmental causes like the Glitterati jet-setting to Paris for brunch or Babs getting to keep her swimming pool full and lawn green. The dead? Wel I’m sure that Bellaire and the Hamptons can be kept ‘green’ with suitably sanitized ash fertilizer…

A few hundred (according to the news, probably more lke a few dozen) people congregated in front of the New Orleans city hall to protest the city’s plans to spend some $40-million on surveillance cameras. They say that the $40-million could be used to finance some 11,000 jobs over the summer for ‘at risk’ thugs….errrr, youth.
Well now, we first have the issue of gathering outside of city hall on a Saturday. Granted, the council not being there doesn’t mean that anything less will be done than when they are in session, but……
Next we have the issue of how can you effectively supervise a make-work group that large and what will they do? It’s not as if we have thousands of youth all wondering if they should get up, report for work and earn minimum wage, or go out, party and make big bucks selling dope to and/or mugging those who got up and went to work.
I think I’m inclined to vote for the cameras, at least we can get evidence for court.

Absolutely fantastic afternoon. Drove the GGS home and took tne beach road back. Turning north on the access road to the interstate I drive through a long stretch of nothing but trees, all along the road, both sides. Sky was pure Simpsons, no wind, temps and humidity were perfect – it was like being in a trance with someone else driving, almost surreal. That’ll hold me for a week or two.

Lord, we ask for a blanket of protection over all our troops and law enforcement who serve to defend and protect us. Bless our representatives with the strength and wisdom they need to achieve the path You have chosen for us.
Please place Your Guardian Angels of Protection around Donald Trump and Mike Pence and their families as they seek to lead America back to You.
Grant us patience, Lord, as the evil ones try to anger us and cause us to fall.

Big storm line approaching so I went out to bring in some equipment.
A few years ago we heard this strange bird at night, nests each summer in the trees on our property and sounds like a whippoorwill. We identified the bird by finding its call on the internet, clearly was this particular bird but the bird’s range fell short of our area. Being curious we contacted a southern university ornithologist who assured us, most assuredly, that we weren’t hearing what we were hearing, the bird is not nor ever was in this area. That was about four years ago and it’s back again, it will be here through about September.

Milwaukee is riddled with murders, shootings, rapes, drugs and carjackings so what do the do-gooders think would be a good use of their time and treasure? Why packing and sending food to Muslims across the pond.
PS I think that Milwaukee leads the nation in co-sleeping deaths of infants and small children, the public just shrugs its sandy head and says nothing to see here. Oh and I think they gave mothers of at risk children cardboard boxes for the baby/toddler to sleep in so that the mum doesn’t get high and smother them. By mistake. Of course.

Reengineering the problem. If you can’t civilize the uncivilized you redefine the uncivilized behaviors into acceptable parameters.
Drug problems? Decriminalize drugs and the problem goes away.
Shooting murders by folks who can’t afford to buy food but somehow have guns? Well criminilize and blame guns while excusing the behaviors as stemming from the oppressive actions of the working class.
Rampant promiscuity that creates seas of single-parent families on welfare that in turn breed crime. Noooooooo problem, see the above gun issue for a prog plan of action.
Being the cause of the problem we don’t recognize out guilt, we need reejumakashion in what’s now expected as reparations in the socioeconomic quagmire we done made.

We’re still suffering Earth Day hangover, local stations are doing the ‘disappearing Louisiana coastline’ crap yet again.
This isn’t new, we’ve been listening to it for decades, I remember it from the very earliest 80s when we moved to NOLA, I watched thousands of acres of marshland we used to shrimp and fish turn into open water, making a flat sea from the major north-south road along the Mississippi miles out to the Gulf. It’s disappearing but the reasons vary according to who’s pushing what agenda.
For many decades the state allowed the oil companies unfettered access to and unsupervised activities in the coastal marshes. They dug canals through the marsh and into the bays that allowed sea water go intrude and kill the grasses which in turn allowed waves and tides to wash out the soil which was largely compost. Add to that the sinking of the underlying soil as it was also heavily organic and you got a mess.
The building of levees along the Mississippi was a disaster too as it channeled all of the silt that used to spill over the river’s banks and build land right out the river’s mouth and into the Gulf. Look at the satellite pix of the river mouth and see the clouds of silt blooming out into the Gulf…it’s silted in all but one channel for ships to use except for one the Feds keep dredged. The river’s built just about all of Louisiana south of the northshore of Lake Pontchartrain in the last 5000 or do years, it’s heavily silt carried down by the river and organic matter and the state allowed business interests and the Feds to not only stop it but reverse it.
For decades the ‘environmentalists’ and the state pols have milked the coastal errosion just as they milked the folks who created the problem. Nearly 40 years we’ve been watching the Henny Pennys flutter around, getting funds and making pin prick changes, trumpeting their ‘achievements’ while the coast contiues to disappear. They get millions, we see no major changes, and now they say they need billions and decades to dent the problem. The politicians and their crooked backers profited from the disaster and now the next generations of crooked pols and their miniobs want the Feds to give them Federal billions…not do the work, mind you, but give the state folks (who are better attuned to the issues and problems) the cash.
So y’all come on down to southern Louisiana where you can be environmentally conscious by making just one trip to watch the coastline and your cash both disappear at the same time.

Got a piece on the TV now featuring an oldtimer pilot flying a newby reporter over the disappearing coadtlibe. Oldtiner’s telling him how there were miles upon miles of coastline in the olden days, all gone now, it’s miles of water now. The piece features the pilot going on and on until, at the end, the reporter asks him if it’s the result of clinate change. The pilot says “I don’t buy that” and they cut him short and close the piece.
