Even though I tease auscitizenmom about her carb addiction, it is ZurichMike who loves pasta, potatoes, and rice (I live savory starches, not sweet). Today is Ash Wednesday, the start of Lent. This year I am going “lower carb” for Lent. No pasta, potatoes, bread, rice, or snacks, and no white sugar. I’ll have to get buy on bacon, bourbon, and bacon and maybe an alibi vegetable or two.

Happy Ash Wednesday, ZM! I too, gave up carbs. My favorite foods are all carbs, with butter, and salt!
Rice (brown, white, basmati, fried, steamed, doesn’t matter — hell even rice wine is the most delicious kind of wine), potatoes, pasta, bread, chips, all gone for Lent. It’s going to be the hardest thing I’ve ever done. I have no idea what I’m going to eat on Fridays. I refuse to eat tomato soup, and I hate just about all forms of seafood. Might be a water and peanuts/almonds day…

Just reminded me of a terrific escabeche I made last week using (precooked) chicken gizzards.
LikeLiked by 1 person
Did not know what escabeche was so had to research. Interesting!

Recipe I ‘used’: http://allrecipes.com/recipe/18916/escabeche/
I cooked the giblets by simmering them in chicken stock I’d added chicken bouillon (instead of salt), onion, garlic to. You can save the used broth for chicken soup/stew.
I use sweet red bell peppers instead of green which has a more bitter flavor. You can also experiment with different vinegars and oils.
LikeLiked by 1 person
I’ve never had chicken gizzards. When cooked, are they still somewhat chewy or is it tenderized with all the acidic stuff?
LikeLike
It takes a bit of work. Slow cooking will help minimize the rubbery quality and as you cut the gizzards (no livers) into smaller pieces you can trim away some of those more chewy bits of harder tissue. I also get large boxes of just hearts (czarina loves to eat hearts…I draw no conclusions) and if you can find those that chewy part declines in direct proportion to the number added. I find it’s great fresh and actually makes a great wrap-type of gnosh the next day with some lettuce to cut the acidity a bit.
Taste changes with different types of oils and vinegars. I’ve not noticed that the vinegar doesn’t seem to change the giblet’s consistency but I know they’ll be a bit chewy, it’s their nature.
I take the oil and vinegar and mix it with the peppercorns a day ahead of time, then strain them out before adding the vinagrette…saves a lot of ‘mouth’ problems.

Butter, GARLIC, olive oil, GARLIC, anchovies, GARLIC…
I learned to use name-brand butter (if you can’t find a good locally made one) unsalted butter as the store brands frequently lower their price by adding more water to it. I also go to a grocery store thatvsells the real Italian anchovies as they have a better taste than the stuff you buy in the grocery store. Barring that you can use the regular ones, resilts will just be a bit saltier.
We use it on French bread with Parmesian to make garlic bread…you can also put mozie and or provolone on it too.

Hardest part for me is I’m allergic to almost all raw fruits and veggies. It seems the more sugar they have, the worse it is for me, but even stuff without really any (celery, spinach) I’m allergic to.
Cooked, they are fine. Raw, they make my mouth and throat and gums itch, can lead to swelling, etc. I think it is lessening as I age (I can now usually eat a handful of grapes without having massive issues) but it still isn’t great.
Most docs just don’t know what to make of that. I did find one once, who was involved with my gall bladder. Her husband had something similar, and she equated it to a drug allergy of natural sugar, not really a good allergy. She hypothesized that cooking transformed the complex sugars that I was probably allergic to into the more simple sugars like sucrose, which I was perhaps not allergic to. Why I would be allergic to that, I’m not sure.
Watermelon and cantelope, though, are deathly for me. Can’t have ’em. Melons and such I avoid like the plague. Even raw potatoes make my hands itch terribly when peeling (I once accidentally touched my face afterwards, got some potato stuff into my eye, rubbed the eye too hard, and detached the vitreous from my retina, ‘causing all kinds of issues).
So I eat meat, and carbs. Refined carbs especially, since they have simple sugars that I’m not allergic too. It is almost a certainty I’ll die from heart and diabetes issues. I’m looking forward to sampling some good food and drink in Heaven that I’ve missed out on here.

Wow. That sounds really hard. Sorry Cetera.

Checked this with an allergist? If it’s a sugar allergy it would be good to find out which ones andbif there’s a treatment for it. Sugar is now part of nearly everything – I was floored when I found out it’s a part of so many processed meats. Never can tell when you might run across it unexpectedly.
LikeLike
Yeah, and they tell me I’m allergic to everything. Pretty much any raw plant matter, it seems. Chocolate and ketchup too, which I think might be possible, but I usually eat it in moderation without any problems.
I would need a more specific specialist who deals more exclusively with sugar allergies, and I’ve never come across anyone like that. I pretty much know what I’m allergic too, and it isn’t that big of a deal. I pay attention to what I eat, and for the most part it isn’t an issue since if it is cooked, I’m fine.
I’ve had minor allergic reactions to peanuts before, but I think it may have been a fluke, ’cause I eat peanuts all the time without issue. Might have gotten a piece of walnut or pecan in there, which I am allergic to. I can’t eat cooked walnuts or pecans, though. Different allergy, true nut allergy, I guess.
I was going to start taking shots before we moved to AZ, because I was getting ear infections due to allergies inflaming the eustation tubes in my ears. Since we moved, though, I’ve had almost 0 environmental allergies here in AZ. I get stuff once in a while, that seems more like a cold to me, but my wife has much worse allergies here. When she gets completely overwhelmed by them, I’m usually a little stuffy, so that might be something related. My ears itch a lot, too. I get something akin to eczema inside my ear canal that is allergy related, and they itch and itch and itch. That still happens.
Growing up, I didn’t go outside during the summer. I played youth soccer and got covered in hives wherever my skin touched the grass. When farmers would cut hay, or when the cotton trees were in bloom, life was awful. There were days every summer where I would wake up, and my eyes would be glued shut due to dried mucus from watery eyes throughout the night. I’d have to hot-pack them for 20 minutes before I could open them.
The first time that happened, I was pretty panicked. I like to think I was as cute as a newborn kitten who couldn’t open her eyes, but I’m pretty sure that wasn’t the case.
LikeLike
I have always had allergies, but only a few at a time and nothing near what you have. I took shots for years. And, expected when I moved back to FL I would have a problem, but other than an off and on stuffy nose, not too bad. However, I was intrigued by what you said. “My ears itch a lot, too. I get something akin to eczema inside my ear canal that is allergy related, and they itch and itch and itch.” This has been annoying me, too. I don’t know about the ear canal, but I definitely have eczema on my ears that just won’t go away.

Louisiana dorta balked on the enhanced licence until Feds told ’em that if they didn’t get on board the residents would have to drive or walk if they wanted to go anywhere. Now the residents can opt for an enhanced or a regular license if they don’t want to fly/bus/train somewhere.

This is pure prog-based BS. The officer had a legal obligation to contact the Feds once his NCIC check (routinely done in a traffic stop for wants/warrants) showed he had outstanding warrants. Had he not he was guilty of dereliction of duty and quite possibly liable in any civil trial for damages Chavez would have performed were Chavez not arrested.
Let’s see if the Governor will put down, under his signature, that he’s ordering the State Police to ignore any Federal arrest warrants on illegal regardless of what they are for.

I want him to then invite them into the Oval Office, and have them all make themselves comfortable on the plush couches.
Then I want them to play Trivial Pursuit, the latest Genus edition.
Then I want to watch and laugh as Trump wins.

Seen over at Legal Insurrection:
One of the things Trump does in his speeches, over and over again, which I think is very subtle, very smart, and must take lots of practice:
at the end of each and every clause or tidbit, he tells you that you, or the country, are going to benefit.
Paraphrasing: “We’re going to re-negotiate NAFTA, and we’re going to have more jobs, and you’ll have a job.”
“We’ll repeal and replace Obamacare, and we’ll have something better, and your health care costs are going to go down.”
And so on. Always wth the tag at the end. He’s setting the hook into ordinary Americans, and they get it. They see it. They understand that Trump is doing what he’s doing FOR THEM.
It’s powerful, and when he gets on a roll it’s very powerful indeed.
There are parts of his speaking dynamics that I don’t like, but the man knows how to sell, and he knows how to give a speech.

If you pay attention to what motivates or persuades people, President Trump is very subtly speaking to people caught in the generational welfare cycle. Time after time he is telling them you want a job not welfare. This is the first time some of those people are actually hearing that working is more fulfilling and beneficial than welfare.
President Trump is brilliant at making his remarks personal and speaking to his target audience.

Like many, likely a majority, I subscribed to CRTV to watch Mark Steyn’s segments. A hundred buckeroos and two weeks later Steyn has been fired and Michelle Malkin hasn’t been in evidence since December. If this isn’t Bait-and-Switch I don’t know what is, but I am furious that an allegedly conservative web site would engage in such fraud. I emailed CRTV and thus far haven’t been given the dignity of a response, let alone the refund I demanded. What say you Mark Levin, is this how you treat your allies?
Apparently, they filmed a segment with Steyn on Saturday, and fired him less than 24 hours later. Steyn said he had no notice.

Our Heavenly Father, Your children come to you tonight to ask for healing and peace throughout our country so that we may return to being One Nation Under God. Guide us to be leaders in Your Kingdom, spreading Your Love and Salvation to all. Forgive us our sins and deliver us from evil.
Lord, we ask for a blanket of protection over all our troops and law enforcement who serve to defend and protect us. Bless our representatives with the strength and wisdom they need to achieve the path You have chosen for us.
Please place Your Guardian Angels of Protection around Donald Trump and Mike Pence and their families as they seek to lead America back to You.
Grant us patience, Lord, as the evil ones try to anger us and cause us to fall.
Spread blessings over Israel and Netanyahu.
We humbly ask that You please comfort those who are grieving and in pain.
Thank you Father, for Your Love and the gift of Life.
