Happy Sunday and good morning everyone.
My husband has the flu. He’s very sick. Will not even drink coffee. That’s never happened in the history of ever! Seemed to be feeling a little better last night, but he’s still running a fever.

He will feel crummy til the fever goes, but remember it is burning off the virus so he can get better. Ice chips feel nice in the hot dry mouth if he won’t drink.

Good mornin’, y’all! Some of us stay up past your bedtime and like to sleep in, but the coffee guy’s work is never done! Sorry to hear about the hub’s flu. I too was not aware that one could have it so bad that coffee couldn’t at least help it a little bit. Since so many are lauding the advent of fall, or autumn, I thought we would take it outside. While not the biggest pot, it’s a purdy one! I’ll be here all day! Carpe your coffee.

National White Chocolate Day – I had a friend who was allergic to regular chocolate but could eat white chocolate.

I am a brown butter fan also czarina. Found a recipe for brown butter sourdough chocolate chunk cookies with a little coarse sea salt. I don’t know how this woman put it all together just right, multiple tries, I’d say, but it’s the best chocolate chip cookie I’ve ever had, bad a big margin. And the flavor all starts with the brown butter and builds.

Here you go. Couple of notes. Chilling the cookies for at least an hour or two is critical. I use discard just past its prime, still bubbly. Do absolutely use chunks instead of chips, and the sea salt is the final touch of heaven. I also add pecans, which I think makes it a lot better. And I follow her suggestion for less flour and plumper cookies.
When I serve these at family get togethers, a double batch is gone before you can blink. Oh yeah, the dark brown sugar is best.

Don’t like sourdough bread so I never cook with sourdough. What is discard? Can I use something else and get the recipe to make up right (quantity of replacement)?

Sourdough is made from a starter you keep fermenting. It must be fed regularly, to keep it alive and fresh. To feed it, you must discard a portion of the starter and feed with flour and water.
Strangely enough, often those who keep starters and work with sourdough a lot find it difficult or wasteful to throw out perfectly good starter. A huge number of recipes have been created to use the discard.
I’ve made cookies, pancakes, crackers and a number of other things with it.
No, on this recipe, you need the discard. It, along with the brown butter, “makes” this unique cookie, so to speak. And it isn’t a sour or strange tasting cookie, just a really compound flavor that combines so well with those dark chocolate chunks and sea salt.

Came home yesterday to find my Internet streaming was out of order. Finally got a technician on the phone who had me unplug and reset some things, but I still don’t have any. So I am working off my phone as a hotspot for my iPad. Service technician will be here in a couple of days, he said.

I hate that for you. The other night my internet was giving me fits, but it was late and cleared up by morning. They always have you unplug and plug, which I have already done before calling them, but they make me do it again, and the box is in my basement, so it is inconvenient. I have a cable to use to bring the box upstairs, but haven’t done it yet.

every once in a while I have a problem. I unplug. if that doesn’t work just wait because I figure it is their problem and it always is. they just don’t want to tell you.

About an hour ago I got a call they would be here in 24 minutes. Technician is out back messing with the attachments on the wall. He said something about sending a red laser and replacing the cable underground. Working diligently in the 94* heat. Bless him.
